Crispy & Cheesy Black Bean Tacos
These black bean tacos are the kind of flavor-packed dinner even someone who’s not a fan of beans will go back for seconds on. I originally made them because I wanted something packed with fiber, but when dinnertime came around, I opened them up and added steak for a little extra protein — and it was perfect. The best part is how customizable they are, so whether you keep them vegetarian or load them up with your favorite fillings, they’ll hit the spot every single time.

Why You’ll Love This Recipe
This is one of those meals that checks every box: easy, hearty, and full of flavor. You only need a few pantry staples, and the whole thing comes together in under 30 minutes. The black beans get a major glow-up thanks to chipotle and tomato paste, and the crispy tortillas with melty cheese make every bite irresistible. Plus, it’s budget-friendly, high in fiber, and a great way to get in a balanced meal without a ton of effort.
Ingredients You’ll Need
You probably already have most of these on hand!
- Black beans – the star of the show. Canned works perfectly.
- Chipotle adobo paste – gives that smoky heat and depth of flavor.
- Tomato paste – adds richness and a little tang.
- Warm spices – think cumin, coriander, chili powder, and oregano.
- Tortillas – flour works best for that golden crisp edge but corn is great too.
- Monterrey Jack cheese – melts beautifully and ties everything together.
- Optional toppings – guacamole, lettuce, sour cream, hot sauce, lime juice, cilantro, onion, and jalapeños.
Start by heating a little olive oil in a skillet over medium heat. Add garlic and let it sizzle just until fragrant — about half a minute. Then stir in tomato paste and let it cook for a minute to caramelize and deepen in flavor.
How to Make It
Now add the black beans and chipotle adobo paste. Stir so every bean gets coated in that smoky, spicy base. Sprinkle in all the spices — cumin, coriander, oregano, chili powder, and onion powder — and mix well. Pour in a splash of broth to loosen it all up, then let it simmer until thick and saucy. As it cooks, mash some of the beans gently with the back of your spoon or a spatula to get that perfect creamy-but-chunky texture.
Once it’s thick and flavorful, taste and adjust seasoning if you need to. Add salt if needed. The mixture should be rich, smoky, and perfectly spiced — ready to be tucked into cheesy, crispy tacos.
To assemble, make sure your tortillas are nice and soft. If they’re a little stiff, cover them with a damp paper towel and microwave for 15 to 30 seconds. On one half of each tortilla, sprinkle some cheese, spoon over the black bean filling, then top with a little more cheese. Fold the tortilla in half to seal everything in.
Heat a bit of oil in a pan and toast each taco for a minute or two per side until golden and crispy. For a fun twist, sprinkle some extra cheese directly onto the pan and press the taco on top — it’ll create a crispy cheese crust underneath that’s next-level good.
Once they’re golden, open them up and load them with your favorite toppings before digging in.
Optional Fillings and Toppings
This is where you can really make it your own. Try adding:
- Guacamole or sliced avocado for creaminess
- Shredded lettuce for crunch
- Sour cream or Greek yogurt for a cool balance
- Hot sauce for extra heat
- Fresh lime juice to brighten everything up
- Chopped cilantro and diced onions for freshness
- Jalapeños for a little kick
- Or even steak, chicken, or shrimp if you want extra protein
Variations to Try
- Swap the black beans for pinto or refried beans for a different flavor.
- Make it vegetarian by using vegetable broth instead of beef broth and skipping the meat add-ins.
- Add roasted corn or diced bell peppers and onions to the filling for extra texture and sweetness.
Make-Ahead and Storing Leftovers
The black bean filling stores beautifully, so these are perfect for meal prep.
- Make-ahead: Cook the filling and refrigerate it in an airtight container for up to 3 days. Reheat on the stove with a splash of broth before assembling.
- Leftovers: Once assembled, store any leftover tacos in the fridge for up to 2 days. Reheat them in a skillet on low heat so they warm and crisp back up.
- Freezer-friendly: You can freeze the black bean filling (not the assembled tacos) for up to a month — perfect for quick dinners down the line.
Pro Tips
- Mash some of the beans but not all — that’s the secret to the perfect texture.
- Don’t skip toasting the tacos in oil; it gives that irresistible crunch.
- For ultra-crispy edges, add a sprinkle of cheese directly to the pan before setting your taco down.
- Always warm your tortillas — they’ll fold easily and won’t crack.

Tips & Notes
Q: Can I make these vegetarian or vegan?
A: Yes! Just use vegetable broth instead of beef broth, and swap the Monterrey Jack for your favorite dairy-free cheese or skip it entirely — the black beans are flavorful enough on their own.
Q: Can I make the filling ahead of time?
A: Definitely. The black bean mixture can be made up to 3 days in advance and stored in the fridge. Just reheat it on the stove with a splash of broth or water before assembling.
Q: Can I use corn tortillas instead of flour?
A: You can! Just make sure to warm them well so they’re flexible — a quick microwave with a damp paper towel or a light toast on a pan works great.
Q: How can I make them extra crispy?
A: Use a little extra oil when toasting and press down gently with a spatula for a golden crust. For cheesy crisp edges, sprinkle a bit of shredded cheese directly onto the pan, then place the taco on top so it fries into a crispy cheese layer underneath.

I made these tonight and they were delicious! I’m going to use the rest of my bean filling to create a black bean patty for an elote burger, so I’m excited about this find and that I can make several dishes with it.
Made this a few times and it was very tasty!
