But here’s the fun twist: we’re blending in cannellini beans. I know, it sounds wild — but hear me out. The beans don’t add flavor, they add texture. How to Make It
Step 1: Marinate for Maximum Flavor
Butter chicken is all about layers of flavor, and it starts with the marinade. Yogurt is the base — it tenderizes the chicken so it cooks up juicy instead of dry. Then comes the garlic and ginger, those aromatics pack so much flavor. And finally, the spices: garam masala, coriander, cumin, turmeric, paprika, chili powder, cayenne, and a pinch of salt. Toss the chicken until every piece is coated and let it hang out. Even 30 minutes will do the job, but overnight? That’s when the magic really happens. But don’t worry you can also cook it rigth away after marinating.
Step 2: Cook the Chicken
Hot skillet, a drizzle of oil or a spoon of ghee, and in goes the chicken. Let it sizzle. Don’t poke and prod too much so that the edges get that golden sear. In 7 to 8 minutes, the cubes are cooked through and perfectly browned. Transfer them to a plate, but whatever you do, don’t clean the skillet. All those browned bits stuck to the bottom? That’s flavor waiting to get mixed into the sauce.
Step 3: Build the Sauce Base
Now turn the heat down and add in tomato paste. This is where patience pays off. Stir it around for a couple of minutes until the color deepens and the sharp, raw edge mellows into something rich and slightly sweet. If you skip this step, the sauce won’t have the same depth — so let it toast.
Step 4: Blend the Beans
Meanwhile, grab your blender. Cannellini beans plus milk = the smoothest, creamiest purée. Add a splash more milk if it’s too thick and won’t blend. This is how we’re going to sneak in some fiber but no one at the table will ever guess what’s hiding in the sauce because all they’ll know is that the sauce is so silky and smooth.
Step 5: Bring It Together
Tomato sauce joins the skillet first, mingling with that caramelized paste. Then in goes the bean purée, making everything instantly creamy. Pour in the heavy cream and just like that, you’ve got the butter chicken sauce dreams are made of. Finish with a knob of butter at the end, swirling it in until the sauce turns glossy and rich. Taste and adjust — a pinch of sugar balances the tomatoes if they’re a little sharp.
TIP: For a thinner sauce, I like to use half and half or whole milk in place of the heavy cream. I find this replacement works really well in this fiber version because the beans achieve that thicker consistency heavy cream normally would.
If the sauce is too thick, feel free to add a splash more of cream and milk.
Step 6: Chicken Meets Sauce
Slide the chicken back into the pan, juices and all. Stir it through until each piece is blanketed in sauce. Let it all bubble together for just a couple of minutes so the flavors meld. Don’t forget to taste it and adjust any spices to your liking. And then… it’s ready. Grab the rice, warm up the naan, and prepare to be obsessed.

- Vegetarian: Cauliflower, paneer, or chickpeas — the sauce doesn’t care, it makes everything taste amazing.

- Dairy-free: Coconut cream + vegan butter = just as luscious, totally dairy-free.

Ingredients
CHICKEN MARINADE
- 1.5 pounds chicken breast (about 2 large breasts), cubed
- 1/4 cup plain whole yogurt
- 2 tablespoons garam masala
- 2 teaspoons salt
- 1 1/2 teaspoons cumin
- 1 tablespoon coriander
- 1/2 tablespoon turmeric
- 2 teaspoons fresh ginger, minced
- 1 tablespoon fresh garlic, minced
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon cayenne powder (add more for spiciness)
- 2 tablespoons neutral oil or ghee
THE SAUCE
- 1 tablespoon neutral oil or ghee
- 1/4 cup tomato paste
- 1/2 cup tomato sauce
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1/4 cup milk (plus an extra splash if needed)
- 2/3 cup heavy cream (or half and half, whole milk)
- 1/3 cup unsalted butter
- 1 tablespoon sugar (or to taste)
FOR GARNISH
- chopped cilantro

Instructions
- Marinate the Chicken: In a large bowl, mix together the chicken, yogurt, garam masala, salt, cumin, coriander, turmeric, ginger, garlic, paprika, cayenne, and oil or ghee. Toss until evenly coated. Optional: Cover and refrigerate for at least 30 minutes, or up to overnight.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken in a single layer and cook for 7-8 minutes, stirring occasionally, until fully cooked through and golden brown on the outside. Remove the chicken from the skillet and set aside.
- Start the Sauce: In the same skillet over medium heat, add 1 tablespoon oil or ghee. Add the tomato paste and cook for 2–3 minutes, stirring often, until it deepens in color and becomes rich and fragrant.
- Blend Beans & Milk: In a blender, combine the drained cannellini beans with milk and purée until completely smooth and creamy. Add an extra splash of milk if needed to loosen the texture.
- Build the Sauce: Stir the tomato sauce into the skillet with the cooked-down tomato paste. Add the bean purée, then pour in the heavy cream. Stir well, then finish with the butter, letting it melt into the sauce. Add sugar and stir together.
- Return the cooked chicken to the skillet, tossing to coat it in the sauce. Simmer for 2–3 minutes to bring everything together. Taste and adjust salt, spice level, and sugar to your liking.
- Garnish with chopped cilantro and a dollop of yogurt. Serve warm with basmati rice or naan.
