If you love the chicken from Chipotle, it is time to learn how to make it at home! Super juicy and packed with flavor, no more boring chicken.

My favorite thing about making this chicken is the unlimited possibilities of what you can do with it. You can make it a part of your meal prep to enjoy in a salad or in a rice bowl. You can make wraps with it. You can even use it to make a delicious and cute appetizer like these mini taco bites!

For the chipotle peppers, I was able to find the diced chipotle pepper paste in my grocery store. If you cannot find the one to the left, you can also use the can to the right which is widely available at any store and brand does not matter. You can chop the peppers finely or add it to a food processor to make it more paste like.

Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chili pepper paste or chili peppers in adobo sauce
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1 1/2 teaspoon salt, more to taste
  • vegetable oil

Instructions

  1. In a bowl or plate, add your chicken thighs along with the spices and chili paste. Mix to ensure that all the chicken is spiced evenly.
  2. Over high heat, get your pan hot. Slightly grease it and add the chicken thigh. Cook for about 5 minutes until the side facing the pan is golden brown. Flip over and cook on the other side for about 3 to 4 minutes. Then drop the heat to low, cover the pan and let it cook for another 3 to 4 minutes. All the crispy bits from the bottom of the pan should remove and stick on to the chicken.
  3. Remove from heat.
  4. Chop the chicken thighs into small cubes just like Chipotle!
  5. Garnish with chopped cilantro (optional) and enjoy.
