- Oven: If you don’t have an air fryer, roasting works just as well. Spread the potatoes out on a parchment-lined baking sheet so they’re not crowded (that’s the key to crispiness). Roast at 425°F for 35–40 minutes, flipping halfway through.
Want to save time? You can even use frozen cubed potatoes, fries, or wedges as a shortcut. Just toss them with a little extra seasoning before roasting or air frying, and they’ll turn out delicious.
Creamy Garlic Sauce Dreams
Every shawarma needs a garlicky sauce, and this one is silky, tangy, and loaded with garlic flavor. It comes together quickly by whisking mayonnaise with sour cream or yogurt, minced garlic, a squeeze of lemon juice, sugar, black pepper, and a splash of water until smooth and pourable.
This sauce is not just for drizzling over the bowl — it doubles as a dip for the extra roasted potatoes on the side. If you like your sauce extra bold, don’t be shy with the garlic. On the flip side, if you want a lighter twist, you can make it entirely with yogurt instead of mayo.

- 1/4 teaspoon turmeric
ROASTED POTATOES
- 3 russet potatoes
- 2 tablespoons neutral oil
- 1 tablespoon cornstarch
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
GARLIC SAUCE
- 3/4 cup mayonnaise
- 1/3 cup sour cream or plain yogurt
- 3 to 5 garlic cloves, minced
- 1 teaspoon white sugar
- juice of 1/2 lemon
- 1 teaspoon black pepper (more to taste)
- 3 tablespoons water
TOPPINGS
- shredded lettuce
- chopped pickles
- pomegranate molasses (for drizzle)
Instructions
MAKE THE CHICKEN
- In a bowl, combine olive oil, lemon juice, garlic, and all the spices to make the marinade.
- Add the chicken thighs and coat well. If you have the time, cover and marinate for at least 30 minutes or up to overnight.
- Heat a skillet or grill pan over medium-high heat and cook the chicken for 5 to 6 minutes per side until golden brown and cooked through.
- Let rest for a few minutes, then chop into bite-sized chunks.
MAKE THE POTATOES
- Peel the potatoes and cut them into small, even chunks.
- Toss the potatoes with oil, cornstarch, salt, and black pepper until well coated.
- For the air fryer, cook at 400°F for 20 to 25 minutes, shaking halfway through, until crispy and golden.
- For the oven, roast at 425°F for 35 to 40 minutes on a parchment-lined baking sheet, flipping halfway through, until crispy and golden.
MAKE THE GARLIC SAUCE
- In a bowl, whisk together mayonnaise, sour cream or yogurt, garlic, sugar, lemon juice, black pepper, and water.
- Mix until smooth and creamy, then adjust seasoning to taste.
ASSEMBLY
- Add a base of crispy roasted potatoes to each bowl.
- Layer shredded lettuce over the potatoes.
- Add the chopped shawarma chicken on top.
- Sprinkle on chopped pickles.
- Finish with a drizzle of garlic sauce and pomegranate molasses.
