

The Perfect Chicken Marinade
Ingredients
- 1 pound chicken breast
- 2 tablespoons olive oil
- 2 teaspoons chili powder blend
- 1 1/2 teaspoon salt or to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- pinch cayenne powder optional
Instructions
- In a small bowl, add olive oil, chili powder, salt, paprika, garlic powder, oregano, and cayenne. Mix together.
- If chicken breasts are thick, cut across in half to get thinner breasts. You can also pound it out with a mallet so it is even.
- Pour the marinade over the chicken and coat evenly.
- Heat a large skillet or pan over medium-high heat. If your pan sticks, spray with oil.
- Add chicken to the pan and cook about 5 to 6 minutes each side or until the center is 165°F.
- Cut into thin strips or small pieces and enjoy.
Notes
- Don’t touch and move the chicken around too much on the pan. Just like when you make burgers, you want it to stay still so it gets a nice browning as it sears.
- If your chicken breasts are uneven in thickness, you can pound out the thicker parts so it cooks evenly.
- The only way to get juicy chicken is to make sure you don’t overcook it. The best way to do that is check the temp and take it off the pan when the center is 165°F.
