It hits every single texture and flavor you want in a shawarma wrap. Crispy juicy chicken, creamy garlicky sauce, tangy pickles, fluffy fries, and that sweet tang from pomegranate molasses all wrapped in warm flatbread and toasted until golden. What makes it different from a classic chicken shawarma is that the outside is brushed in a red sauce and toasted all around until extra crispy.

And the best part is you don’t need a vertical rotisserie. Cooking thin strips of marinated chicken in a hot skillet gives you those caramelized edges and charred bits that mimic that classic shawarma flavor. Let’s get into it!

The Chicken Marinade

Shawarma marinades are all about bold spices and acidity. This one uses yogurt, tomato paste, garlic, lemon, and warm spices that coat every piece of chicken.

The yogurt tenderizes the meat and helps the spices cling to the chicken. Tomato paste adds depth and color, and a little hot sauce adds background heat without making the dish overly spicy. Feel free to always add more hot sauce if you want it spicier. The amount the recipe calls for does not make it spicy, it just adds dimension.

Now before getting into it, it can be a little complicated to make as something you get unlucky with a bad batch of garlic. If you prefer not to make it from scratch, there’s two store-bought ones that I absolutely love:

Traditional shawarma garlic sauce is also known as Lebanese toum, where garlic and oil emulsify into a thick fluffy sauce. You’ll need a food processor, lots of fresh garlic, patience, neutral oil, salt, and lemon juice. Fresh garlic is key so you’ll need to peel your own cloves and make sure there are no green parts or else the garlic spread will turn out spicy and basically inedible.

Start by adding the garlic and salt to a food processor and process until the garlic becomes extremely fine and almost pasty. You may need to scrape it down a few times.

From there the key is slowly emulsifying the oil.

With the processor running:

  • Drizzle in about half the oil slowly
  • Add half the lemon juice
  • Continue adding the rest of the oil slowly
  • Finish with the remaining lemon juice

Alternating the oil and lemon juice helps stabilize the emulsion and keeps the sauce from breaking.

Once everything is incorporated, add the sour cream and mayonnaise. This is not traditional at all but I like adding them to make the sauce creamier and mellow the garlic slightly so it’s balanced rather than overpowering. You should end up with a thick, creamy, pale sauce that’s bold but smooth.

Garlic Sauce Troubleshooting

If you’ve never made garlic sauce before, a few things can happen, but they’re all easy fixes.

  • If the sauce looks thin: Keep processing a little longer. Sometimes it just needs more time to emulsify.
  • If the sauce breaks: Add a spoonful of mayonnaise and process again. This usually brings it right back together.
  • If the garlic tastes too strong: Add a little more sour cream or mayo to mellow it out. You can also add an ice cube or two.
  • If the sauce feels too thick: Add a tiny splash of water or lemon juice while processing.

Easy Garlic Sauce Shortcut

If you want something quicker and milder, there’s a super easy shortcut.

Just mix together in a bowl:

  • mayonnaise
  • a little garlic paste
  • lemon juice
  • sour cream

Stir until smooth and adjust the garlic and lemon to taste. It’s not traditional, but it’s creamy, garlicky, and works perfectly for these wraps.

The Spicy Sauce

This sauce gets brushed on the outside of the shawarma before toasting. It helps the bread crisp up and adds a ton of flavor.

It’s simply whisked together in a bowl:

  • olive oil
  • melted butter
  • hot sauce
  • tomato paste
  • paprika
  • pomegranate molasses
  • a pinch of salt

For the hot sauce, I personally love using the Vietnamese chili sauce that comes in a jar, but feel free to use something like sriracha or your favorite chili sauce instead.

When the wraps toast in the pan, this sauce caramelizes slightly and creates that golden crispy exterior.

The Fries

Fries inside shawarma might sound unusual if you’ve never had it before, but it’s actually very common and adds the best texture to the wrap.

To keep things easy, I just buy frozen fries and air fry them.

While the chicken cooks and the sauces come together, I leave the fries in the freezer. Then once the chicken is done and everything else is ready, I throw the fries in the air fryer so they’re hot and crispy right when it’s time to assemble the wraps.

It keeps the timing simple and makes sure the fries stay crispy.

Assembling the Shawarma

This is where everything comes together.

Start with a warm flour tortilla or Arab flatbread. Warming it first makes it easier to roll and prevents cracking.

Spread a generous layer of garlic sauce across the bread, then add:

  • a pile of the crispy chicken
  • a handful of fries
  • long strips of pickles

Finish with a drizzle of pomegranate molasses for that sweet tangy balance.

Then wrap everything tightly like a burrito.

Toasting the Shawarma

Before toasting, brush the outside of the wrap with the spicy butter sauce.

Heat a skillet or grill pan over medium heat and lightly coat it with oil, butter, or ghee.

Place the shawarma seam side down in the pan and toast for a few minutes per side until the outside is golden and crispy.

A few helpful tips:

  • Toast seam side down first so the wrap seals shut
  • Press gently with a spatula for better browning
  • Turn until all sides are golden

The outside becomes crispy while the inside stays juicy and creamy.

Pomegranate molasses is a thick tangy syrup made from reduced pomegranate juice. It adds the perfect sweet-tart balance to shawarma.

• online retailers like Amazon

A little drizzle goes a long way and really completes the wrap.

Storage and Make Ahead

The chicken can be cooked ahead and stored in the refrigerator for up to 3 days. Reheat it in a hot skillet so the edges crisp back up.

The garlic sauce can also be made ahead and stored in the fridge for several days.

When ready to serve, assemble the wraps and toast them fresh so the outside gets crispy.

Ingredients

CHICKEN MARINADE
  • 2 pounds boneless & skinless chicken thighs, cut into thin strips
  • 1/4 cup plain yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon sumac
  • 1 teaspoon coriander
  • 1 teaspoon allspice
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cardamom
GARLIC SAUCE
  • 1/3 cup garlic cloves
  • 1 cup neutral oil
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
SPICY SAUCE
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon hot sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon pomegranate molasses
  • 1 teaspoon paprika
  • pinch of salt
FOR ASSEMBLY
  • large flour tortillas or Arab flatbread
  • pickles, cut into long strips
  • French fries, cooked
  • pomegranate molasses

Instructions

MARINATE THE CHICKEN:
  1. In a large bowl, combine the yogurt, olive oil, tomato paste, hot sauce, lemon juice, minced garlic, paprika, salt, sumac, coriander, allspice, black pepper, and cardamom. Mix until smooth.
  2. Add the thinly sliced chicken thighs and toss until every piece is well coated in the marinade.
  3. You can cook the chicken right away, but if you have time, let it marinate in the refrigerator for up to 24 hours for deeper flavor.
MAKE THE GARLIC SAUCE:
  1. Add the garlic cloves and salt to a food processor and process until the garlic is very finely minced and beginning to look pasty. Use a spoon or rubber spatula to scrape down the sides of the food processor as needed.
  2. With the food processor running, slowly drizzle in about half of the neutral oil in a thin steady stream so it begins to emulsify and thicken.
  3. Add half of the lemon juice and continue processing.
  4. Drizzle in the remaining oil slowly while the processor runs, then add the remaining lemon juice. This alternating process helps the sauce emulsify and become thick and creamy, about 8 to 10 minutes total.
  5. Add the sour cream and mayonnaise and process again until completely smooth. Taste and adjust salt if needed. Refrigerate until ready to use.
MAKE THE SPICY SAUCE:
  1. In a small bowl, combine the olive oil, melted butter, hot sauce, tomato paste, pomegranate molasses, paprika, and a pinch of salt.
  2. Whisk together until smooth and well combined.
COOK THE CHICKEN:
  1. Heat a large skillet over medium-high heat and add a drizzle of oil.
  2. Add the marinated chicken in a single layer. Let it cook undisturbed for about 3 to 4 minutes so it develops a deep golden sear.
  3. Stir and continue cooking for another 5 to 7 minutes, mixing occasionally so the chicken gets charred edges all around.
  4. Cook until the chicken is fully cooked through and caramelized in spots.
ASSEMBLY:
  1. Warm the tortillas or Arab flatbread.
  2. Spread a generous layer of garlic sauce across the bread.

So good! It’s all about the garlic mayo. I just mix garlic and premade mayo. I also skip the spicy sauce on the outside and the final pan toasting step. I just add hot sauce inside the shawarma. I prefer the fries on the side. But however you do it, it’s great!

Holy wow sooo good! I couldn’t find pomagranate molasses at my local store, so just did some chat gpt recipe research and made it by reducing some juice with sugar and a little lemon juice. Incredible meal 😋
