Tandoori Chicken Arayes

Tandoori Chicken Arayes are what happen when South Asian bold, spiced tandoori flavor meets crispy, golden stuffed pita from the Levant. Think juicy seasoned chicken pressed thin inside bread, pan-seared until every edge is crunchy and caramelized. Then dipped into a creamy cilantro chutney that’s herby, tangy, and just a little spicy. It takes less than 30 minutes to make and is one of my favorite dinners to make when I don’t feel like cooking.

Arayes are already one of my favorite ways to make ground meat exciting. They’re simple, handheld, and all about texture. But giving them a tandoori-inspired spin with garam masala, turmeric, ginger, garlic, and jalapeño just takes them to another level. But if you prefer a more classic version with ground beef, then you can try out this recipe!

What Are Arayes?

Arayes are a Middle Eastern street food made by stuffing pita bread with seasoned ground meat and cooking it until the bread crisps up and the filling stays juicy. Traditionally they’re grilled and use ground beef/lamb, but stovetop works perfectly.

For this version, we’re taking inspiration from Tandoori Chicken and using ground chicken and layering in warm, aromatic spices with yogurt to keep everything tender. The filling is pressed into the pita to stuff it and it cooks directly in the bread. As the arayes cooks in the pan, the bread crisps up on the outside while also soaking the savory juices of the meat. Enough talking now and let’s get into the recipe.

Cilantro Chutney

Start with the chutney so it has time to chill and the flavors can really come together. It is completely optional to make this but I highly recommend. You can also serve this with a pre-made dip from the store if you’d like.

Add a generous handful of fresh cilantro to a blender along with a jalapeño (seeds and stem removed), plain yogurt, mayonnaise, salt, black pepper, and a squeeze of fresh lime juice. Blend until completely smooth and creamy.

If it looks too thick, add a tiny splash of water just to loosen it slightly. You want it smooth but still thick enough to cling to the arayes when dipped.

Taste and adjust:

  • More lime for brightness
  • More salt if it feels flat
  • More jalapeño if you want extra heat

Transfer to the fridge while you prepare everything else.

Tandoori Chicken Filling

In a large bowl, combine the ground chicken with finely diced jalapeño (seeds and stems removed) and very finely diced red onion. Make sure everything is chopped small — this helps the filling spread evenly and prevents tearing the pita. If you prefer, you can blend the jalapeno and red onion into a paste if you don’t like chunks when you bite into the arayes.

Add plain yogurt, chopped cilantro, garlic paste, and ginger paste. The yogurt keeps the chicken moist and tender while the garlic and ginger build that classic tandoori-style base.

Now add the spices: garam masala, salt, smoked paprika, turmeric, ground coriander, ground cumin, and a dash of cayenne.

Mix thoroughly until fully combined and smooth. The mixture should feel slightly sticky and cohesive — not crumbly.

For a smoother texture: Instead of leaving the jalapeño and red onion finely diced, you can blend them together in a small food processor until almost paste-like before mixing into the chicken. This gives you a smoother filling with no visible chunks and distributes the flavor even more evenly.

Important: Don’t skip mixing well. You want the spices evenly distributed so every bite tastes the same.

Stuffing, Cutting, and Cooking

Cut each pita in half to create pockets and gently open them without tearing.

Spread a thin, even layer of the chicken mixture inside each half, pressing it all the way to the edges. If you prefer it on the thicker side (like how I made them), feel free to lay on the chicken more but know it will affect the cooking time.

Once stuffed, cut each half in half again so you now have quarters. This makes them easier to flip and gives you four crispy sides instead of just two.

Heat a skillet over medium heat and add a thin layer of neutral oil. You don’t need to deep fry — just enough oil to help the pita crisp and turn golden.

Place the arayes in the pan and cook for 2 to 3 minutes per side (4 sides total), turning carefully so every edge crisps up. Adjust the heat as needed. If they’re browning too fast, lower the heat slightly to ensure the chicken cooks through.

You’re looking for:

  • Deep golden crust
  • Crispy edges
  • Fully cooked chicken inside

Other Cooking Options

Air Fryer

Lightly spray all sides of the arayes with oil. Air fry at 375°F for about 8–10 minutes, flipping halfway through, until crispy and cooked through. This method gives you great crispiness with less oil and is perfect for smaller batches.

Oven

Preheat the oven to 400°F. Brush or lightly spray the arayes with oil and place them on a baking sheet lined with parchment paper or a wire rack.

Bake for about 15–18 minutes, flipping halfway through, until golden and cooked through. For extra color and crispiness, broil for the last 1–2 minutes while watching carefully.

Storage & Reheating

Store leftover arayes in an airtight container in the fridge for up to 3 days.

To reheat, use a skillet over medium heat or an air fryer at 350°F until crispy again. Avoid microwaving if possible — it softens the pita and takes away that crunch.

Store the chutney separately in the fridge and use within 2–3 days.

Ingredients

TANDOORI CHICKEN FILLING
  • 1 pound ground chicken
  • 1 jalapeño, very finely diced (seeds and stems removed)
  • 1/4 red onion, very finely diced
  • 1/4 cup plain yogurt
  • 1 to 2 tablespoons finely chopped cilantro
  • 1 tablespoon garlic paste
  • 1/2 tablespoon ginger paste
  • 1/2 tablespoon garam masala
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • Dash of cayenne powder
ASSEMBLY
  • 3 pitas, halved
  • Neutral oil, for cooking
CILANTRO CHUTNEY
  • 1 generous handful cilantro
  • 1 jalapeño (seeds and stem removed)
  • 1/4 cup plain yogurt
  • 1/4 cup mayonnaise
  • Salt, to taste
  • Black pepper, to taste

Instructions

MAKE THE CILANTRO CHUTNEY
  1. Add the cilantro, jalapeño, plain yogurt, mayonnaise, salt, black pepper, and a squeeze of lime juice to a blender.
  2. Blend until completely smooth and creamy.
  3. Taste and adjust seasoning as needed, then refrigerate while you prepare the filling.
MAKE THE FILLING
  1. In a large bowl, add the ground chicken, diced jalapeño, red onion, plain yogurt, chopped cilantro, garlic paste, and ginger paste.
  2. Add the garam masala, salt, smoked paprika, turmeric, coriander, cumin, and cayenne.
  3. Mix thoroughly until fully combined and smooth. The mixture should be cohesive and slightly tacky.
ASSEMBLY AND COOKING
  1. Cut each pita in half and gently open to create pockets.
  2. Divide the chicken mixture evenly between the pita halves, pressing a thin, even layer inside each one all the way to the edges.
  3. After stuffing, cut each half in half again so you now have quarters.
  4. Heat a skillet over medium-low heat and add a thin layer of neutral oil.
  5. Cook the arayes for 2 to 3 minutes per side (4 sides total), turning carefully, until deeply golden and crisp on all sides and fully cooked inside. Adjust heat as needed so they crisp without burning.
  6. Air Fryer Option: Lightly spray all sides with oil and air fry at 375°F for 8–10 minutes, flipping halfway through, until crisp and cooked through.
  7. Serve hot with the cilantro chutney for dipping.
Tips & Notes

Q: Can I use chicken breast instead of ground chicken?
A: Yes. Finely chop or pulse chicken breast in a food processor until it resembles ground chicken.

Q: How do I know when they’re fully cooked?
A: The outside should be deeply golden and crisp and the chicken inside should no longer be pink. Internal temperature should reach 165°F.

Q: Can I bake them instead?
A: Yes. Bake at 400°F for 15–18 minutes, flipping halfway through, until cooked and crispy.

Made these for my partner and they were absolutely delicious. One thing I will note is that you shouldn’t worry if the dip turns out a little strong. It’ll work wonderfully with the end result!

The chicken end result is a little lacking in a punchy, strong tandoori taste but it’s seriously still amazing. I would give this recipe a 5 star if the strong was a bit more POW!

Id also love to see maybe the nutritional values on this page in future.

These were so easy to make but looked so fancy and were delicious!

I usually don’t make comments on recipes but AUGHHHH THESE WERE ACTUALLY INSANE!! And the sauce went perfect with it!! I didn’t do the jalapeños cause I’m not amazing with spice, but I added enough cayenne that the arayes were spicy and the sauce cooled it down and wow!! I just used a food thermometer to check for fineness and it didn’t take too long to cook! They tasted almost like samosas (but better, my husband said) these will definitely be made over and over!!!

Delicious!! I used a yogurt tahini sauce instead which I prefer because I don’t like cilantro. Making this again this week!
