Turkey Ham and Cheese Croissant Egg Bake

Think of this as the ultimate savory French toast—flaky, buttery croissants soaked in a rich, eggy custard, but instead of syrup, you get layers of melty cheddar and smoky turkey ham baked to golden perfection. It’s the kind of breakfast that feels fancy but secretly takes minimal effort, making it perfect for brunch, meal prep, or those mornings when you want something warm and cozy without the extra work. Every bite is buttery, cheesy, and full of flavor, with crispy edges and a soft, custardy center.

Why You’ll Love This Recipe

This croissant bake is a total game-changer! First, it’s ridiculously easy—just assemble, pour, and bake. If you move fast, I feel like you can finish making this in slightly over 30 minutes. No need to individually dip and cook each piece like traditional French toast. Second, it’s a total crowd-pleaser, making it perfect for feeding a group. And let’s be honest, anything with layers of cheese and flaky croissants is already a win. Plus, you can prep it ahead of time, so all you have to do in the morning is pop it in the oven!

Ingredients You’ll Need

  • Croissants – Day-old croissants work best because they soak up the custard without getting too soggy. If yours are fresh, just let them sit out for a few hours before using.
  • Turkey ham – A lighter option that still gives that savory, smoky bite. You can also use deli turkey meat or thinly sliced beef bacon for a different flavor.
  • Cheddar cheese – Melts beautifully and adds that sharp, creamy flavor. You can also use Swiss, mozzarella, or gouda for a different twist.
  • Eggs & half and half – The base of the custard, making everything rich and fluffy. Whole milk or heavy cream also works if you don’t have half and half.
  • Salt & pepper – Just enough to season the custard and bring out all the flavors.
  • Yellow mustard – A bit of mustard adds a subtle tangy kick to the custard, balancing out the richness of the cheese and turkey ham.
  • Butter – Helps crisp up the tops of the croissants, adding even more golden, buttery goodness.

How to Make Turkey Ham and Cheese Croissant Egg Bake

Start by slicing the croissants in half and stuffing them with two slices of turkey ham and two slices of cheddar cheese. This makes sure every bite is filled with melty, savory goodness. Feel free to add more or less cheese and meat depending on your preference. Once assembled, cut each filled croissant into four smaller sections. This not only makes it easier to serve but also helps the custard soak into every part of the bake.

Arrange the croissant pieces snugly in a buttered baking dish. You can place some pieces with the croissant tops facing up for extra crispiness and others with the filling exposed to let the cheese get extra golden and melty and help the custard soak up into all the nooks and crannies of the croissant. Mixing up the arrangement adds texture and variety—some bites will be crisp and flaky, while others will be extra cheesy and rich.

In a bowl, whisk together eggs, half and half, mustard, salt, and pepper until smooth. Pour this over the croissants, making sure to cover everything evenly. Let it sit for about 5 minutes so the bread can absorb all that custardy goodness.

Dot the top with small pieces of butter—this helps create that golden, crispy finish. Cover with foil and bake in a preheated oven for the first 20 to 25 minutes. Uncover and cook for another 10 minutes until puffed up, golden, and slightly crispy on top. The cheese should be perfectly melted, and the inside should be soft but not soggy. Let it rest for a few minutes before serving so everything sets nicely.

Tips for the Best Croissant Egg Bake

  • Use slightly stale croissants – Fresh ones will still work, but day-old croissants hold up better when soaked in the custard.
  • Let it sit before baking – Giving it a few minutes to absorb the egg mixture ensures the croissants are soft and flavorful inside.
  • Don’t overbake – The center should be set but still soft, not dry. Keep an eye on it in the last few minutes.
  • Make it ahead – Assemble everything the night before, cover it, and refrigerate. Just bake in the morning for an easy, stress-free breakfast!

Variations & Add-Ons

  • Switch up the cheese – Try Swiss, gruyère, or provolone for a different flavor.
  • Add veggies – Sautéed mushrooms, spinach, or caramelized onions would be amazing layered in.
  • Go spicy – Add a sprinkle of red pepper flakes or drizzle with hot honey before serving.
  • Make it meaty – Swap turkey ham for beef bacon or smoked turkey slices.

Storing & Reheating

Leftovers? Lucky you! Store any extras in an airtight container in the fridge for up to 3 days. To reheat, pop it in the oven at 300°F for about 10 minutes or until warmed through. You can also microwave it, but the oven keeps the texture crispy.
