Marry Me Spicy Vodka Gnocchi
This “Marry Me” spicy vodka gnocchi isn’t just another pasta dish; it’s the kind of recipe that has everyone falling head over heels. With soft, pillowy gnocchi swimming in a creamy, spicy sauce topped with a touch of burrata, each bite is layered with bold, unforgettable flavor. Whether you’re cooking for a special occasion or just craving a cozy dinner with a kick, this recipe is a surefire hit. Let’s dive into how to make this dreamy, saucy masterpiece and some tricks to make it extra delicious!

Making the Sauce
The magic starts with an aromatic base of garlic and olive oil, which creates a rich, savory foundation. Once the garlic turns golden and fragrant, tomato paste comes in to add a deep, concentrated tomato flavor and a gorgeous color. Let the paste cook until it darkens slightly—this brings out its natural sweetness and rich undertones. To elevate the flavor, add in the cream, parmesan, red pepper flakes, and dried basil. The red pepper flakes add that perfect spicy kick, but if you’re more on the mild side, you can dial back the spice or add it gradually. Let the sauce simmer until it thickens and all the flavors meld together into something truly irresistible. Then season with salt and black pepper to taste. Finally, finish it off with a dollop of butter for even more flavor and creaminess.
Bringing It All Together
After you’ve cooked your gnocchi (either fresh or store-bought works perfectly), it’s time to add them to that rich, creamy sauce. The gnocchi soaks up the sauce beautifully, so fold them in gently until every piece is well coated. Just before serving, top it off with some burrata or fresh mozzarella, letting it melt slightly into the sauce. It’s an extra touch of creaminess that takes this dish to a whole new level.
Trick: If you want your gnocchi to have a slight crisp on the outside, pan-sear them in a bit of olive oil before adding them to the sauce. This adds a lovely texture and makes each bite extra satisfying!
Tips and Variations
Make it Extra Spicy: Add more red pepper flakes or a dash of hot sauce to amp up the heat, perfect if you like a bit more spice.
Herb It Up: Fresh basil leaves are a beautiful finishing touch, but fresh oregano or even a sprinkle of parsley can add extra brightness.
No Burrata? No Problem: Substitute with fresh mozzarella or even a dollop of ricotta on top. It brings a similar creaminess that melts perfectly into the dish.
Make-Ahead and Leftovers
If you’re planning for leftovers (and honestly, you might want to double the recipe for this!), this dish reheats like a dream. Store any extra gnocchi in an airtight container in the fridge, and when you’re ready to enjoy it again, reheat it gently on the stove over low heat. Add a splash of cream or milk to the pan as it warms to bring the sauce back to its silky consistency.
This spicy vodka gnocchi is also a great make-ahead option. Prepare the sauce in advance, then cook the gnocchi fresh when you’re ready to serve. This way, you can enjoy the freshest, pillowy gnocchi with a sauce that’s already full of flavor and ready to go.
