If you love crab rangoon and crispy bread, you’re in for a treat with these Crab Rangoon Sandwiches! This delightful fusion takes inspiration from Chinese shrimp toast, combining the creamy, savory filling you adore with the satisfying crunch of toasted bread. It’s the perfect appetizer or snack that will impress your friends and family!

Making the Crab Filling
To get started, you’ll need a few key ingredients for the crab filling, including imitation crab meat, creamy Kewpie mayo, and a touch of cream cheese for richness. Toss in some soy sauce for that umami punch, along with fresh green onions for a burst of flavor. Don’t forget your seasonings! Garlic powder, salt, and black pepper elevate the taste, while a sprinkle of cornstarch and an egg white help bind everything together. You’ll also need slices of stale white bread and some vegetable, canola, or peanut oil for frying.
Start by mixing your imitation crab meat, Kewpie mayo, soy sauce, and cream cheese in a large bowl. The key here is to ensure everything is well combined for a creamy filling. Once that’s done, stir in the garlic powder, salt, black pepper, and chopped green onions. This is where the flavor really starts to shine! Finally, add the egg white and cornstarch to the mixture to help it hold its shape when frying.
Tip: If you want to take your crab filling to the next level, consider adding a dash of sriracha or sambal chili paste for a spicy kick or a squeeze of lemon juice for a zesty twist!
Preparing the Bread
Next, take your stale white bread slices and trim off the crusts if you prefer a softer texture. For a fun presentation, cut the bread into triangles or keep it whole—either way, they’ll taste amazing! You can always cut them in half after frying which is what I did.
Try not to use too fresh of or very soft bread or else it is more likely to absorb too much oil!
Assembling the Sandwiches
Now it’s time to create your sandwiches! Spread a generous layer of the crab filling on one slice of bread, and top it with another slice to form a sandwich. Make sure to press down gently so the filling adheres well.
Variation: For a twist, try adding thinly sliced jalapeños or bell peppers inside the sandwich for an extra crunch and burst of flavor!
Frying the Sandwiches
Heat vegetable oil in a skillet or deep pan over medium heat. You want enough oil to shallow-fry the sandwiches, so don’t be shy! I chose to deep fry them but that’s not necessary. Shallow frying turns out just as crispy, uses less oil, and they’re not as greasy. Once the oil is hot, carefully place the sandwiches in the pan, allowing them to fry for a few minutes until the bottom is golden brown and crispy. Flip them over to fry the other side until it’s equally crispy and delicious.
Tip: To test if the oil is ready, drop in a small piece of bread. If it sizzles, you’re good to go!
Draining and Serving
Once your sandwiches are perfectly fried, transfer them to a paper towel-lined plate to drain any excess oil. This step is crucial for that perfect crunch! Serve them hot with your favorite dipping sauces—sweet chili sauce pairs wonderfully but a spicy mayo is also fabulous!

Can I Bake or Air-Fry?
Baking Variations
- Baked Crab Rangoon Sandwiches: Instead of frying, preheat your oven to a high temperature (around 400°F). Brush or spray the outside of the assembled sandwiches with oil or melted butter, then place them on a baking sheet lined with parchment paper. Bake for about 15-20 minutes, flipping halfway, until golden brown and crispy on both sides. This method results in a lighter sandwich while still maintaining that satisfying crunch.
- Cheesy Baked Version: Before baking, sprinkle shredded cheese, like mozzarella or cheddar, on top of the crab filling before placing the second slice of bread on top. This creates a deliciously gooey layer of cheese that complements the creamy filling.
- Herb-Infused Bread: Use herbed bread or spread a mixture of garlic and herb butter on the outside of the bread before baking. This infuses the sandwich with additional flavors and elevates the overall taste.
Air Frying Variations
- Crispy Air Fryer Sandwiches: Preheat your air fryer to 375°F. Lightly brush or spray the assembled sandwiches with cooking oil, then place them in the air fryer basket in a single layer. - Take the stale white bread slices and trim off the crusts if preferred. You will need pairs of slices for each sandwich.
- You can leave the bread as whole slices or cut each slice in half for smaller sandwiches, depending on your preference.
ASSEMBLE:
- Spread a generous amount of crab filling on one slice of bread in each pair. Top with a second slice of bread to create a sandwich.
- Press down lightly on the sandwich to ensure the filling adheres well.
FRY THE SANDWICHES:
- Heat vegetable oil in a skillet or deep pan over medium heat, ensuring the oil is deep enough for shallow frying (about 1/4 to 1/2 inch).
- Once the oil is hot, carefully place the sandwiches in the pan. Fry for 2-3 minutes until the bottom is golden and crispy.

DRAIN AND SERVE:
- Remove the sandwiches from the oil and place them on a paper towel-lined plate to drain any excess oil.
