Lemon Loaf Cake
If you love the lemon loaf cake from Starbucks, be prepared to be blown away by this copycat recipe! It’s packed with bright citrusy lemon flavor and the cake is incredibly moist and soft just like the real thing but even better. Drizzled with the most delicious glaze on top, this cake is surprisingly so easy to make and perfect for the summer coming up!

Making the Cake
The best part about loaf cakes is how easy they are to make! It comes together so quickly and can even be whipped up all in one bowl. Let’s break it apart into two sections, the dry ingredients and the wet ingredients.
Here is what you need for the dry ingredients:
- all-purpose flour
- baking powder
- baking soda
- salt
- lemon instant pudding
Just add all the ingredients above to a bowl and whisk together well.
NOTE: For the lemon instant pudding, you can find it with the other pudding boxes in the grocery store. Typically, it’ll be with other baking ingredients in the same aisle. Make sure to get the lemon instant pudding for pie filling not the lemon jello! There’s a big difference. This is what makes the cake extra moist and also have a strong lemon flavor.
Here is what you need for the wet ingredients:
- eggs
- vegetable oil
- sour cream
- vanilla extract
- lemon juice
- white sugar
- lemon zest
Beat together all these ingredients in a bowl. Then combine the wet with the dry until you have a beautiful thick batter. Transfer to a cake loaf lined with parchment paper and bake in the oven at 350°F until a toothpick comes out clean from the center. Remove from the oven and allow to cool at room temperature completely before glazing!
NOTE: Feel free to add in anything else you like into the cake. Consider incorporating poppy seeds or blueberries for added texture and flavor complexity.
The Glaze
Learning how to make a glaze is a great recipe to have under your belt if you love to bake a lot! It can be drizzled on cakes, cookies, donuts, and so much more. The best part is it usually only needs two ingredients at its core and then you can add in other optional ingredients to bring in different flavors. Here is what you need:
- confectioners sugar
- lemon juice
- whole milk
- vanilla extract
Just add confectioner’s sugar along with lemon juice, milk, and vanilla to a bowl. Whisk together very well. A little liquid goes a long way to dissolve the confectioner’s sugar into a thick and creamy glaze. Once the glaze has completely cooled, drizzle the cake generously with frosting. Allow it 5 to 10 minutes to rest for the frosting to set. Then you can slice and enjoy!

Lemon Cake
Ingredients
LEMON CAKE- 1 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3.2 ounces package lemon instant pudding
- 1 1/4 cup white granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 2 tablespoons lemon zest
- 2 cups confectioners sugar
- 3 tablespoons lemon juice
- 1 tablespoon whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F.
- To a large mixing bowl, add the all-purpose flour, baking powder, baking soda, salt, and lemon instant pudding. Whisk together well.
- To another bowl, add the sugar, eggs, vegetable oil, sour cream, vanilla extract, lemon juice, and lemon zest. Beat together until smooth.
- Now add all the dry ingredients to the wet. Combine together until you have a batter.
- Line a loaf pan with parchment paper and transfer the batter.
- Bake for 55 minutes to 1 hour until a toothpick comes out clean in the center.
- Remove from the oven and allow to cool for about an hour before glazing.
- To a bowl, combine confectioners sugar with lemon juice and milk to create a glaze.
- Once the cake is cooled, add the glaze on top, adding as little or as much as you'd like.
- Let the frosting set for 5 minutes and then slice and

Tastes like the real thing! I didn’t even make the icing it was so good by itself. I couldn’t get lemon pudding mix so I used vanilla with extra lemon zest, turned out amazing!
