Let’s turn my favorite bang bang shrimp into bang bang cauliflower – a fun vegetarian version that’s just as delicious! The cauliflower is battered and baked to crispy golden perfection and then covered in a sweet and tangy bang bang sauce. You won’t have cauliflower any other way after this!

I made the intention that 2022 would be the year I put out more vegetarian, plant-based recipes and so far I’ve been loving it. First we made crispy potato tacos and now we’re making bang bang cauliflower.

The recipe is super simple to make and insanely delicious. It’s the perfect appetizer, finger food, or even main dish to enjoy with rice.

How to Prepare the Cauliflower

You will need a whole head of cauliflower with all the florets cut off. Then we are going to prepare a batter for the cauliflower. In a mixing bowl, combine buttermilk, cornstarch, flour, garlic powder, paprika, salt, black pepper, and chili powder. The final consistency will be pretty thick.

Add the florets to the batter and mix it around to make sure each floret is evenly coated. Then sprinkle some Panko breadcrumbs and mix that in too!

Transfer to a baking tray lined with parchment paper, making sure each piece is spread apart and not touching. Pop in the oven to bake at 350°F for 20 minutes. Flip each piece over and bake for another 15 minutes or until golden and crispy.

Although this recipe calls to bake them, if you want to make it more indulgent, you can always choose to fry them.

How to Prepare the Sauce

While the cauliflower bakes away, prepare the bang bang sauce which is both tangy and sweet! To a bowl, mix together mayonnaise, sweet chili sauce, minced garlic, rice vinegar, sriracha, and chopped parsley. Mix all together and it’s ready to go.

Once the cauliflower is out of the oven, transfer it to a large bowl. Add as much or as little bang bang sauce that you desire and shake it around so they’re all evenly coated.

Transfer to a plate and add some sliced green onions on top to enjoy.

Ingredients

BANG BANG SAUCE

  • 1/2 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha more to taste
  • 1/2 tablespoon fresh parsley finely chopped

CAULIFLOWER & BATTER

  • 1 whole head cauliflower florets cut off
  • 1 1/4 cup buttermilk
  • 1/3 cup cornstarch
  • 2/3 cup all purpose flour
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup panko breadcrumbs

Instructions

  1. Preheat oven to 450°F.
  2. In a small bowl, make the bang bang sauce. Combine mayonnaise, sweet chili sauce, garlic, rice vinegar, sriracha, and parsley until smooth. Set aside.
  3. To a mixing bowl, add the buttermilk, cornstarch, flour, chili powder, garlic powder, paprika, salt, and black pepper. Whisk together until you have a thick batter consistency.
  4. Add the cauliflower florets and mix until all are coated evenly. Then add the panko breadcrumbs and mix again.
  5. Line a baking sheet with parchment paper and add the battered cauliflower so that they’re not touching.
  6. Pop in the oven to bake for 20 minutes. Flip over each floret and then bake for an additional 15 minutes.
  7. Once golden and crispy, take out of the oven. Add to a bowl and add as little or as much sauce as you’d like and toss it. To keep the cauliflower more crispy, just dip in the bang bang sauce instead of tossing it in.
  8. Top it off with sliced scallions and enjoy.

Tasted amazing. You could eat it with or without the bang bang sauce. Since we aren’t huge fans of Mayo, I added less Mayo and more sweet chili and Sriracha. We will probably be eating this weekly. Thank you for sharing.

I like to try this recipe, but I’m a little confused about the oven settings. Is it at 350F (175 C) as described in text or 450 F (225 C) as in recipe below?
(Sorry Europe, not native english ;-))

I’m so glad I found this recipe. I’ve had the bang bang shrimp but the cauliflower looks amazing. Do you recommend baking this in the airfryer, if so at what temp and time?
    Thank you

**Just a heads up for the author. In your description above the actual recipe you say cook at 350°, but in the actual recipe at the bottom it states to preheat oven to 450° ** I did mine at 350° and they turned out great!

Thank you for this great recipe 🙂

Hi Moribyan! I just came across you s as bc your recipes a couple of days ago on Instagram. My hubby is pescatarian so I just had to make these. Just finished making it. So delicious! OMG! Love it! I even added a tsp of garlic chili sauce as I had it on hand and it was so mouthwateringly tasty! Thanks for your recipe. Can’t wait to try more of your recipes

This was delicious! I used all vegan ingredients. My only recommendation is to add cooking spray to your baking sheet so the cauliflower doesn’t stick to the pan. Also I found that air frying for about 10 minutes gets the cauliflower the crispiest.

  17. Theresa

You have one oven temp at 350 and the other 450…which one do we use?

I made this with GF flour and pablo and left our the garlic and green onion due to family allergies. You know the GF products can be a bit tricky but this was still fantastic! I loves how it was oven roasted and not fried. Five stars.

It was really good I remade the bang bang sauce with less mayo and more chili sauce so on my 2 tbsp of mayo and it was great!

  24. Catherine

I had high hopes for this recipe. I made this for dinner today. Are you sure the measurements for the corn starch and flour are correct? The cauliflower was overpowered by these 2 ingredients. It tasted weird, but the sauce was delicious. I would definitely make that again.

I really liked it. Followed the recipe to a T. The first time I did it I poured the batter onto the tray, don’t do that. It came out super soggy. Rather, place each one on the tray. I like to eat it with white rice and a simple salad. My family liked it as well.

Since we tried the recipe some years ago we like to cook Bang Bang Cauliflower at least all 3 month. We enjoy to eat it as dish with jasmin rice. And we use light mayonnaise instead of normal mayonnaise. Can‘t wait to eat it next friday.
