French Toast Matcha Latte
There is no meal more comforting than some warm fluffy French toast for brunch. Now imagine all those incredible flavors captured in a matcha drink! The cinnamon and maple syrup pair perfectly with the bitterness of the matcha.

Matcha and French toast are truly a matcha made in heaven! Get it? Anyways, I got the inspiration to make this drink from a cafe called La La Land in Santa Monica. They infuse the matcha with cinnamon and maple syrup and after that first sip, I knew I had to recreate it at home and share it with all of you!
The French Toast Milk
To put the French toast in this matcha, we are going to infuse the milk with the signature flavors of the breakfast dish.
Just combine the milk of choice you typically go far in a latte like whole milk, 2%, almond, or oat, and combine with maple syrup, cinnamon, and vanilla extract. Depending on how sweet you want it, customize the maple syrup to your taste. I also like to add a lot of cinnamon since it is a French toast flavor after but feel free to customize that as well.

Making the Matcha
To make the matcha, add matcha to a small cup or bowl. Add a small splash of hot water to form the matcha into a paste and whisk until there are no more clumps. Then add the rest of the water and whisk together until smooth. Finally, I like to add vanilla syrup to sweeten it up. This is the most traditional way to make it. Then just add it to the fridge until the matcha cools down.
Another way to make the matcha that works fine too and what I do when I’m a bit lazy is just add all the warm water at once along with the vanilla syrup and use an electric whisk to smooth it out. Then just add it to the fridge until the matcha cools down.
A third way that I see some people do is just whisk the matcha with room temp water and the vanilla syrup or blend it in a blender until smooth so you don’t have to wait for the matcha to cool down in the fridge since this is an iced drink.

WHAT MATCHA TO USE
My favorite to use is off Amazon by Jade Leaf Organic. I’ve had success using both ceremonial-grade matcha and culinary-grade matcha in this recipe. Ceremonial grade is a bit more expensive and intended just for drinking since it has a more subtle taste. Culinary-grade matcha is a lot more affordable and strong so the flavor can still come out when it’s added to baked goods, lattes, and oats. Either one you choose will be fine though.
The Cold Foam
Vanilla Sweet Cream Cold Foam is the best thing you can add to your matcha or coffee. It sweetens your coffee and makes it creamy all at the same time – the best of both worlds. Every time you take a sip of the matcha, you get a bit of cold foam and the texture of it feels just like a cloud. Here is what you will need!
TO MAKE THE SWEET CREAM COLD FOAM, YOU JUST NEED 3 INGREDIENTS:
- Heavy Cream: This is the most important ingredient because the fat in the heavy creamy is what allows for whipping to create that foam consistency.
- Vanilla Syrup: We want to add just enough to make the cold foam a bit sweet but not TOO sweet. You can use any store-bought vanilla syrup that you like or you can make it at home. It’s super simple to make. Just add 1 cup of sugar, 1 cup of water, and 3 tablespoons of vanilla extract to a pot. Bring to a boil and continue boiling until all the sugar dissolves and the syrup is clear. Then drop the heat to low and simmer for 10 minutes until it thickens. Transfer to a jar or container and allow to cool to room temperature. It will thicken more as it cools too.
- 2% Milk: If you don’t have 2% milk, you can use whole milk or even dairy-free milk. It just helps to thin it out since heavy cream can be a lot.

To a measuring cup, bowl, or stand mixer, add the heavy cream, vanilla syrup, and milk. Whip together until it’s thick and fluffy. Ensure not to over-mix it or it will break the texture, making the final product grainy. I like to use an electric whisk that I bought from Amazon. It’s perfect for small individual portions. If you want to make a lot of cold foam, you can use a Kitchen Aid stand mixer with a whisk attachment. It will be A LOT of work if you decide to whisk by hand.
How to Assemble the Drink
Once all the components are assembled, grab a cup and add some ice to the bottom. Add the desired amount of milk to the cup, pour in the shot of matcha on top, and finish off with the foam on top. Finally, I like to add a sprinkle of cinnamon on top but it is completely optional. Now just enjoy!

Ingredients
FRENCH TOAST MATCHA- 1 cup whole milk
- 1/4 cup maple syrup
- 1/2 tablespoon cinnamon, adjust to taste
- 2 to 3 teaspoons matcha powder
- 3/4 cup to 1 cup warm water
- 1 cup heavy cream
- 3 tablespoons vanilla syrup
- 1/3 cup low-fat 2% milk
Instructions
MAKE THE COLD FOAM- In a bowl, jar, or measuring cup, add the heavy cream, vanilla syrup, and low fat milk.
- Whisk together until it thickens up. Use an electric whisk for the fastest results, otherwise it can take some time.
- Add the matcha to a small bowl and 2 tablespoons of warm water and whisk until there are no more clumps and it's completely smooth. Add the rest of the water and whisk again until smooth. Pop in the fridge for a few minutes to cool down.
- To make the french toast flavored milk, combine whole milk, maple syrup, and cinnamon by whisking together.
- To a cup, add ice to the bottom, the French toast milk, the matcha, and then finish off with the cold foam on top.
