Gingerbread Overnight Oats
Gingerbread Overnight Oats tastes just like the holidays in this hearty and healthy breakfast that takes only five minutes to prep. It’s almost too tasty that you would think you’re having dessert for breakfast!

How to Make It
If you’re always in a rush and end up skipping breakfast as a result, you definitely have to try making overnight oats. If you couldn’t tell by the name yet, they’re prepped the night before so that in the morning, you can just grab and go. It is possibly the easiest breakfast you’ll ever make with only ten minutes of prep needed. The hardest part is waiting overnight for it to be ready but as long as you plan ahead and make it the night before, all you got to do is wake up, open the fridge, and breakfast is ready!
HERE ARE THE INGREDIENTS YOU NEED:
- old-fashioned rolled oats
- milk of choice
- brown sugar
- molasses
- vanilla extract
- cinnamon
- ginger
- clove

Just combine all the ingredients in a jar or any container you have, seal it up, and pop in the fridge to thicken up overnight. If you can’t wait overnight, wait at least four hours or until the oats have soaked up most of the milk. Depending on how thin or thick you like the overnight oats, feel free to adjust the amount of milk accordingly. You can also use your favorite milk in this recipe, any is fine. It can be almond, oat, whole milk, or two percent.
For a boost of protein, you can also add either of the following:
- greek yogurt
- protein powder
- collagen peptides
The next morning when the oats are ready, just take out of the fridge and you can add a sprinkle of cinnamon, whipped cream, granola, or crumbled gingerbread cookies. You can also add chopped nuts for a little crunchy element before enjoying!

Gingerbread Overnight Oats
Ingredients
- 1 cup old fashioned oats
- 1 cup milk, of choice (almond, oat, whole milk)
- 1 tablespoon brown sugar
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon clove
Instructions
- In a bowl, combine the oats with milk, light brown sugar, molasses, vanilla extract, cinnamon, ginger, and clove. Mix together really well.
- Place in an air tight container and store in the fridge to soak and thicken overnight or at least 3 to 4 hours if you can't wait that long.
- The next morning, you can add granola or crushed gingerbread cookies on top along with some whipped cream and a sprinkle of cinnamon to enjoy.







My son loves this overnight oats. Whenever I ask what kind of oatmeal he would like he picks this one vs all the others he has tried.
So delicious literally could not stop eating this! I love over night oats but this recipe took it to the next level!
I had been reminiscing about December baked goods and came across this recipe. The only changes I made were to halve the brown sugar and to blend everything together with some plain Greek yogurt. So delicious! Definitely one of my new go-to oatmeal recipes!
