They won’t taste bitter and mushy, they’ll be crispy, sweet, and savory and these crispy parmesan Brussels sprouts check off all those boxes!

Crispy Parmesan Brussels Sprouts

Brussels sprouts are the kind of vegetable where if you don’t know how to properly make them, you’re just not going to like them. But when you know how to prepare them right, you will LOVE them! They won’t taste bitter and mushy, they’ll be crispy, sweet, and savory and these crispy parmesan Brussels sprouts check off all those boxes!

Making the Honey Garlic Sauce

These Brussels sprouts are the perfect flavor combination of sweet, savory, and spicy!  They are coated in a flavorful garlic and honey butter before going in the oven to roast. It takes five minutes to make and adds so much flavor unlike any other Brussels sprouts you’ve ever had.

Here are the ingredients you need:

  • unsalted butter, melted
  • olive oil
  • garlic cloves, minced
  • salt
  • black pepper
  • parmesan, grated
  • honey
  • red pepper flakes

Just add everything to a small bowl, mix together, and it’s ready to go!

Prepping the Brussels sprouts

To prepare the Brussels sprouts, start out by rinsing them very well.

After rinsing them, trim a bit of the stem off and cut Brussels sprout in half vertically. 

Toss them in the sauce and coat evenly! 

Now it’s time for the crispy parmesan layer. You can use pre-grated parmesan for this step or grate it yourself using a black of parmesan. After tossing the brussel sprouts in the garlic honey butter, you’ll dunk the flat side of each sprout in the parmesan so the whole bottom is covered in parmesan. Then place it flat on a parchment-lined tray, parmesan side down. If you want to save yourself time and effort but still keep the flavor, you can just add lots of parmesan to the bowl or brussel sprouts and toss them to cover in parmesan and that’s it! 

Pop in the oven to roast for 15 to 25 minutes at 400°F, flipping over around halfway or once the cheese has crisped on the bottom. Take them out of the oven when the center is cooked through and they’re crispy on the outside. If you are using very large brussel sprouts, they’ll take more time. Smaller Brussels sprouts like the one I used cook faster.

Take out of the oven, allow to cool for 5 minutes, and then enjoy warm!

Ingredients

  • 1 pound brussels sprouts 
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 1 tablespoon garlic, finely minced
  • 3 tablespoons parmesan, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, more to taste
  • 1/2 teaspoon dried red pepper flakes
  • 2 tablespoons honey 
  • 1 cup grated parmesan

Instructions

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Trim the stem off the brussels sprouts and cut in half. Make sure to cut them all into equal sizes so they cook evenly.
  4. Toss them with melted butter, olive oil, garlic, parmesan, salt, black pepper, red pepper flakes, and honey.
  5. Dip each brussel sprout in the parmesan so that the flat side is covered in parmesan. Press down so the parmesan sticks on and transfer to the tray. Repeat with the rest of the brussel sprouts.
  6. Pop in the oven to roast for 15 to 25 minutes, flipping over halfway once the cheese has crisped up.
  7. Enjoy warm!
Tips & Notes
If you are using very large Brussels sprouts, they'll take more time. Smaller Brussels sprouts like the one I used cook faster. It will also depend on your oven.

So delicious. I didn’t try brussels sprouts until well into my 30s, and I’m so glad I did because they are delicious! Combine them with the crispy parmesan and you can’t go wrong. Thanks for the great recips!

These are delish, I love the salty, spicy and sweet combo. I made them for Thanksgiving and were the perfect side dish, and had to follow up and make them again like a week later lol.
