How to Make the Custard

The process for making French Toast is super simple! There are two components: the custard and the bread. Today we’ll be taking the traditional French Toast custard recipe on the blog and making it pumpkin spice and everything nice flavored.

Here is what you need for the custard:

  • half and half
  • large eggs
  • pumpkin puree
  • brown sugar
  • vanilla extract
  • pumpkin pie spice
  • cinnamon

Add all the ingredients to a bowl and whisk very well until smooth and completely homogenous. It will be a beautiful light orange color and smell like a pumpkin spice latte!

I love using half and half to make my French toast because it’s the perfect middle ground between milk and heavy cream. If you don’t have half-and half, you can replace with whole milk. If you have heavy cream and whole milk on hand, you can add equal parts of both and there you have homemade half and half (hence the name)!

Making the French Toast

Now for the bread, we’ll be using Hawaiian Sweet Rolls! If you have the opportunity to, let the rolls sit out on a wire rack for 1 hour or a few hours to dry it out. I never have the time to do this but that’s how traditional French toast is made. If the bread is dry, it soaks the custard better.

There is enough custard to make it through about 24 rolls but you don’t have to make that many if you don’t want to. All you need is a pan and unsalted butter. Just dip the roll in the custard all around and take it out. If you let it sit in the custard too long, it will get soggy so just dip and let any excess drip.

If you’d like the custard to soak deeper into the Hawaiian Rolls, you can use a toothpick to make holes in the rolls so the custard can seep to the center. The Hawaiian Roll brand also sells the sliced brioche bread version of their rolls if you want a more traditional French toast that soaks easily.

Then cook it on a pan with a little bit of butter over medium heat until golden brown all around. You’ll have to constantly rotate it so each side is golden and crispy.

Once you’ve made the desired amount, just finish it off with powdered sugar and maple syrup to enjoy. I also like to add a bit of whipped cream and a dash of pumpkin pie spice on top!

Ingredients

  • 1 package of Sweet Hawaiian Rolls (12 rolls)
  • 3/4 cup half and half
  • 2 large eggs
  • 1/2 cup pumpkin puree
  • 1 tablespoon light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice, more to taste
  • 1/4 cup unsalted butter, to cook the French toast
  • powdered sugar
  • maple syrup
  • berries optional
  • whipped cream optional

Instructions

  1. To a bowl, make the custard for dipping the bread in. Combine half and half, eggs, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and cinnamon. Whisk really well until completely smooth and homogenous.
  2. Heat a large pan over medium heat. Add a little bit of butter. If the pan is too hot, the butter will burn so make sure it's not too high.
  3. Dip each Hawaiian Roll in the custard quickly and place on the pan. Repeat with a few more until the pan is full but not crowded.
  4. Cook for about 2 minutes, then turn each one over and repeat so every side of the roll gets golden brown and crispy. Take off the pan and repeat with the rest of the Hawaiian Rolls.
  5. Sprinkle with powdered sugar and drizzle maple syrup on top. Optional, serve with whipped cream and a dash of pumpkin pie spice to enjoy!

Wow, delicious treat to use up some Hawaiian rolls left over from Easter lunch. Everyone raved about them! So creative and delicious. Our rolls were very old so I wound up cutting some in half to better soak up the custard. Very very good, and a surprisingly effective pre-workout carb load 😉
