The easiest dinner in under 30 minutes is creamy, garlicky shrimp scampi! It’s absolutely delicious over a bed of pasta or with some crispy bread to dip in. Now you can skip the restaurant and make this fancy yet simple dinner at home and even better!

How to Prepare the Shrimp

To make shrimp scampi, ideally you want to use large shrimp or anything bigger. I used large but you can go for extra-large too. Just make sure they are cleaned properly so that means peeling, de-veined, and if you’d like you can take the tail off. However, traditionally the tail is kept on for shrimp scampi and this will help keep the shrimp even more juicy!

Now another step I love to take to prepare the shrimp is butterflying the back. This makes the shrimp appear bigger and more surface area, means more flavor. They also just look a lot more pretty which is a bonus! You just cut along the back but not all the way through. There are a lot of tutorials online if you search butterflying shrimp for visual learners. I also show how in the recipe video down below.

Making the Shrimp Scampi

To make the shrimp scampi, you just need one pan, 30 minutes, and lots of garlic!

The Ingredients:

  • large shrimp
  • olive oil
  • spices
  • garlic
  • chicken broth
  • lemon juice
  • parsley
  • parmesan

To a large bowl, add the shrimp. Optional, butterfly the back of each shrimp to make them large. Season the shrimp with paprika, onion powder, oregano, cumin, salt, and black pepper.

Add olive oil and unsalted butter to a pan over high heat. Once hot, add the shrimp in, making sure not to overcrowd them. Sear on one side for 2 minutes or until golden and then flip over to sear the other side. Remove from the pan once fully cooked.

To the same pan, add more butter and minced garlic. Saute garlic for a minute and then add lemon juice to deglaze the pan. Scrape the bottom of the pan and add the chicken broth and red pepper flakes.

Bring the broth to a boil and add the parmesan and parsley. Finally, add back in the shrimp. Combine all together, taste, and adjust anything to your linking.

Enjoy warm with crispy bread or pasta!

Ingredients

THE SHRIMP
  • 1 pound large shrimp, deveined and peeled
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
THE SCAMPI SAUCE
  • 1/4 cup unsalted butter
  • 1 1/2 tablespoon minced garlic
  • 1/4 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 2 tablespoons lemon juice, more to taste
  • 1/2 cup chicken broth
  • 1/4 to 1/3 cup parmesan, grated
  • 2 tablespoons parsley, finely chopped

Instructions

Tips & Notes
  • You can use only smoked paprika or only sweet paprika depending on your taste or half-half.

Made this tonight for dinner with pasta and it’s amazing!! So good! I put more lemon than the suggested amount because I like a more lemony taste with the pasta. And a lot more Parmesan. Delicious! *chefs kiss* would love to try it with bread next time!

I made this shrimp scampi about a week or two ago for the first time and it was BOMB, I tripled the recipe so I could add some spaghetti to it to make it like a pasta. I made it for Super Bowl Sunday and my older brother (who is extremely picky) asked for me to pack some for work for him because he loved it. It’s so yummy and flavorful!
