If you like s’mores, you’re going to love these no-bake truffles then! Picture gooey marshmallow, a crispy honey graham cracker crust, all dipped in creamy chocolate. It’s basically a more sophisticated version of a s’mores and I think it tastes better too.

The cross-section is EVERYTHING! You can see all the layers so beautifully and the best part is they’re a lot easier to make than what they may look like. It’s a no-bake recipe so that means the only time you have to wait is for the chocolate to set. This recipe was inspired by one of my favorite chocolates you can find in stores called Smashing S’mores. Let’s get into it!

How to Make It

For this recipe, you only need 3 ingredients!

  • marshmallows
  • graham crackers
  • chocolate

All the ingredients of a traditional s’more but the process is a bit different and a lot more fun.

Start out by cutting off a portion of the marshmallow so that it is sticky on one side. You can use regular marshmallows or vegan ones depending on your dietary preference.

Attach to a graham cracker and cut the graham cracker with a sharp knife to the size of the marshmallow. It might take a few tries if the graham cracker cracks and doesn’t cut right but that’s ok! Repeat with the rest of the marshmallows and graham crackers.

Now, if you are having trouble with the marshmallow sticking, you can add a bit of melted chocolate in between and let it harden to act as glue. Another option is using marshmallow fluff as glue.

To make dipping easier, stick a toothpick into each piece directly through the marshmallow. Optional, you can also pop the marshmallow graham crackers in the fridge to chill before dipping in chocolate to speed up the process but it’s not necessary.

Add chocolate to a microwave-safe bowl and microwave in 30 second intervals on 50% power. Stir between each interval until completely melted and smooth.

Dip each piece into the chocolate and let any excess drip off. Lay flat on parchment paper on a baking tray. Repeat with the rest. Optional, you can add a sprinkle of crushed graham crackers or mini marshmallows on top.

Pop in the fridge for 15 to 20 minutes until the chocolate is set. At this step, you can add a drizzle of chocolate on top or enjoy as is!

Storing Leftovers

Depending on where you live and the quality of chocolate you used, you might be able to store them on the counter top. The best way though is to keep them in an air-tight container in the fridge and just pop them out one at a time whenever you want to enjoy one. They last quite a while in there!

  • graham crackers

Tips & Notes
If this makes it easier for you, you can chill the marshmallows attached to the graham crackers in the fridge before dipping in chocolate too! This will just help the chocolate harden faster but it's not necessary.
