Jalapeño Cheddar Cornbread Crust Chicken Pot Pie

Since the chicken pot pie recipe has been a huge hit on the blog, I had to make a new version of it! Picture savory chicken filling loaded with veggies and warm spices topped with a slightly sweet, cheesy jalapeño cornbread that bakes up golden and crispy right on top. It’s a little sweet, a little savory, and everything you want in one bite.

I’ve made pot pie a bunch of different ways on here, but this one might be my favorite twist yet. Instead of puff pastry or a traditional pie crust, the whole thing gets capped off with a jalapeño cheddar cornbread that bakes right on top of the filling in the same skillet. The cornbread soaks up a little bit of the filling underneath while staying golden and set on top, and the sweet-heat combo from the jalapeño and brown sugar plays so well against the herby, savory chicken filling. It takes a bit of time and effort and dishes but the final product is worth it all!

Let’s Talk Filling

This starts the way most of my favorite comfort food dinners do: butter, carrots, onion, and celery in a skillet until everything softens up and starts smelling like heaven. From there, garlic, sage, thyme, and a little rosemary go in for that earthy, cozy depth that makes this taste like fall no matter what time of year you’re making it. Fresh herbs are always better but if you have to go dried, that’s fine.

A couple tablespoons of flour gets whisked in to build the base of the sauce, then chicken broth and half and half go in to bring it all together into something thick, creamy, and rich. This is where the flavor really comes alive:

  • Smoked paprika for warmth
  • Red pepper flakes for a little kick
  • Yellow mustard powderfor tang
  • A dash each of turmeric and nutmeg to round everything out

Shredded rotisserie chicken and frozen peas fold in last, keeping this filling classic without a ton of extra effort. Rotisserie chicken is one of my favorite shortcuts for weeknight cooking, but if you’ve got leftover cooked chicken sitting around, that works just as well here.

The Jalapeño Cheddar Cornbread

Here’s where this pot pie really sets itself apart. Instead of pastry, the topping is a one bowl jalapeño cheddar cornbread that goes straight from mixing bowl to skillet. Whisk your dry ingredients together, then dump the wet ingredients right into the same bowl and stir until just combined. Overmixing is the enemy of good cornbread, so stop as soon as you don’t see dry streaks anymore.

Browning the butter before it goes into the batter is a small step that makes a big difference. It adds this deep, nutty flavor that plain melted butter just can’t give you, and it’s worth the extra few minutes every time.

Fold in the sharp cheddar and diced jalapeño last, then spoon the whole thing over your chicken filling and spread it out evenly to the edges. It bakes up golden, slightly sweet, and just spicy enough to keep things interesting.

One Big Skillet or Mini Skillets, Your Call

You’ve got options here. Make this in one large oven safe skillet for a family style dinner, or split the filling and cornbread batter between individual mini skillets if you want everyone to have their own. Both work great, just make sure whatever you’re using is deep enough to hold the filling without the cornbread batter spilling over the sides too much once it puffs up.

One tip I’d never skip: set your skillet, or all your mini skillets, on a baking tray before it goes in the oven. The filling can bubble up while it bakes, and the last thing you want is a mess on the bottom of your oven. A tray underneath catches all of that and saves you the cleanup.

Tips and Tricks

  • Let the filling thicken fully before topping it with the cornbread batter. If it still looks loose or runny, give it a few extra minutes on the heat so it can support the topping without sinking in.
  • Don’t overmix the cornbread batter. Stir just until the dry ingredients disappear and stop there for the best texture.
  • If you’re making individual portions in mini skillets, start checking for doneness a few minutes earlier than you would with one large skillet, usually around the 18 minute mark.

Variations to Try

This recipe is easy to make your own depending on what you’re in the mood for:

  • Spicier: Add a second diced jalapeño to the cornbread batter, or leave the seeds in for extra heat.
  • Milder: Leave out the jalapeño entirely.
  • Cheese swap: Pepper jack in place of the sharp cheddar adds even more built-in spice.
  • Protein swap: Leftover shredded turkey works great in place of rotisserie chicken, especially around the holidays.
  • Less sweet: Cut the white sugar down to 2 tablespoons and skip the brown sugar entirely if you want the cornbread to lean more savory.
  • Classic cornbread: Leave out the jalapeño and cheddar altogether if you want a more traditional cornbread topping.

Make Ahead and Storage

The filling can be made up to 2 days ahead of time and stored in the fridge. When you’re ready to bake, just warm it back through in the skillet before topping it with fresh cornbread batter.

For leftovers, store them covered in the fridge for up to 3 days. Reheat individual portions in the oven or air fryer to keep the cornbread from getting soggy, since the microwave tends to soften that golden top too much.

If you want to freeze this, freeze just the filling on its own in an airtight container for up to 2 months. I wouldn’t recommend freezing it with the cornbread already baked on top, since the texture won’t be the same once it thaws. Thaw the filling, then mix up a fresh batch of cornbread batter when you’re ready to bake.

Ingredients

CHICKEN FILLING:
  • 2 tablespoons unsalted butter
  • 1 to 2 carrots, diced (1 large or 2 small)
  • 1/4 large yellow onion, diced
  • 1 to 2 celery ribs, diced small
  • 2 teaspoons minced garlic
  • 3 sage leaves, finely chopped
  • 2 sprigs thyme, finely chopped
  • pinch of rosemary leaves, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/3 cup half and half (or whole milk or heavy cream)
  • 1/2 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon yellow mustard
  • dash of turmeric
  • dash of nutmeg
  • 8 ounces rotisserie chicken, shredded (about 1 1/2 cups)
  • 1/3 cup frozen baby peas
JALAPEÑO CHEDDAR CORNBREAD:
  • 2/3 cup all purpose flour
  • 1/3 cup yellow corn meal
  • 1/2 teaspoon salt
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1/4 cup unsalted butter, browned
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup sharp cheddar, shredded
  • 1 jalapeño, diced and seeds removed

Instructions

MAKE THE FILLING:
  1. Preheat the oven to 400°F and grease a baking dish or cast iron skillet. Place baking dish or skillet onto a larger tray to catch any spillage in the oven.
  2. To a deep pan over medium heat, add the butter and melt it down. Toss in the carrots, onion, and celery and let them soften and turn golden, about 5 to 7 minutes.
  3. Add the garlic, sage, thyme, and rosemary and cook until the whole pan smells fragrant, about 1 minute.
  4. Dust the flour over the vegetables and stir it in, letting it cook for a minute or two so it loses that raw flour taste.
  5. Whisk in the chicken broth a little at a time, followed by the half and half. Season with the salt, black pepper, smoked paprika, red pepper flakes, yellow mustard, turmeric, and nutmeg.
  6. Bring it to a simmer and let it thicken up, about 5 minutes.
  7. Stir in the shredded chicken and peas and take the pan off the heat.
MAKE THE CORNBREAD:
  1. Start out by browning the butter. To a pan over medium heat, add the butter. Cook for 5 to 6 minutes until it starts to bubble and then brown. Make sure not to cook it any further or it can burn. Transfer it to a bowl and allow it to cool so it's not hot.
  2. In a bowl, whisk together the flour, corn meal, salt, baking powder, baking soda, white sugar, and brown sugar.
  3. To the same bowl, add the cooled browned butter, egg, and buttermilk. Whisk again just until combined, no more.
  4. Fold in the cheddar and diced jalapeño.
ASSEMBLY AND BAKING:
  1. Spoon the cornbread batter over the chicken filling in the skillet and spread it out evenly to the edges.
  2. Bake for 20 to 25 minutes, until the top is golden and a toothpick pulls out from the center clean.
  3. Give it 5 to 10 minutes to rest before digging in. Optional, brush with melted butter and honey to enjoy!
Tips & Notes

Q: Can I make the filling ahead of time?

A: Yes, the filling holds up well in the fridge for up to 2 days. Warm it back through in the skillet before you add the cornbread batter and bake.

Q: Can I freeze this?

A: The filling freezes nicely on its own, but I'd skip freezing it once the cornbread is baked on top since the texture won't hold up. Freeze the filling, thaw it, and whip up a fresh batch of cornbread batter when you're ready to bake.

Q: What can I use instead of buttermilk?

A: Stir 1 1/2 teaspoons of white vinegar or lemon juice into 1/2 cup of regular milk and let it sit for 5 minutes before using.

Q: Can I use regular cornbread instead of the jalapeño cheddar version?

A: Yes, just leave out the jalapeño and cheddar and follow the same cornbread steps. It'll still bake up golden on top, just with a more classic flavor.

Q: How do I make the cornbread less sweet?

A: Cut the white sugar down to 1 tablespoon or skip the brown sugar altogether. It'll still have a little sweetness to balance the jalapeño, just more subtle.
