There’s nothing that says fall quite like the smell of apple cider simmering on the stove. It fills the kitchen with that cozy mix of apples, cinnamon, and spice that makes you want to put on a sweater, light a candle, and bake something warm. Living here in Boston, one of my favorite New England weekend activities is going to different farms, trying every apple cider donut I can find, and deciding which one’s the best — it’s serious business at this point. There’s just something about biting into a warm, sugar-dusted donut with crisp air and colorful leaves all around that makes you fall in love with the season all over again.

This loaf is my way of bringing that same experience home — soft, tender, and full of cozy apple flavor, with that buttery cinnamon sugar crunch on top. And the best part? You skip the frying and the mess but still get all the flavor and nostalgia of a fresh cider donut.

While it cools, whisk together the dry ingredients in a large bowl: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cardamom. Ingredients

BATTER
  • 1¾ cups all-purpose flour
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cardamom
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup white granulated sugar
  • ¾ cup light brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup reduced apple cider (start with 1½ cups and simmer 15–20 minutes until it reduces to ¾ cup)
  • ¾ cup unsweetened applesauce
  • ½ tablespoon vanilla extract
CINNAMON SUGAR TOPPING
  • ¼ cup white sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons unsalted butter, melted (for brushing after baking)

Instructions

  1. Preheat the oven: Set the oven to 350°F (175°C) and line a loaf pan with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Reduce the apple cider: In a small saucepan, simmer 1½ cups apple cider over medium heat for 15–20 minutes until it reduces to about ¾ cup and slightly thickens. Let it cool slightly before using.
  3. Make the cinnamon sugar: In a small bowl, mix together the ¼ cup white sugar and ½ teaspoon cinnamon until evenly combined. Set aside.
  4. Mix the dry ingredients: In a large bowl, whisk together the flour, cinnamon, nutmeg, cardamom, baking soda, baking powder, and salt until evenly combined.
  5. Mix the wet ingredients: In a separate bowl, whisk together both sugars, eggs, oil, reduced apple cider, applesauce, and vanilla extract until smooth.

This was delicious!!! So autumny and warm. I didn’t have any light brown sugar left and only realised when I started baking so I used 50g dark muscovado sugar and the rest white sugar. Thanks for the recipe, defo making again
