S’mores Brownie Cookies – Crumbl Copycat
If you’re a fan of the rich, gooey goodness of s’mores and the fudgy decadence of brownies, then this Crumbl copycat cookie recipe is going to be your new obsession. Imagine all your favorite flavors stacked into one epic dessert—layers of chocolatey cookie dough, sweet graham cracker, gooey marshmallow, and fudgy brownie all in one bite. It’s like your favorite campfire treat got a serious upgrade, and I can’t wait for you to try it.

Make the Chocolate Cookie Dough
Start by creaming together butter with both granulated and brown sugars until the mixture is smooth and creamy. This step is crucial for achieving that perfect cookie texture. Add in an egg, an extra yolk, and vanilla extract, and mix until fully incorporated. In a separate bowl, whisk together cocoa powder, flour, cornstarch, baking soda, and salt. Gradually combine these dry ingredients with the wet mixture until a dough forms. For that extra touch of decadence, fold in semi-sweet and milk chocolate chips, then set the dough aside.
Tip: If you like a little extra crunch, try adding some chopped nuts or a sprinkle of sea salt to the dough before baking.
Make the Graham Cracker Cookie Dough
In a mixing bowl, combine graham cracker crumbs, flour, salt, butter, brown sugar, and vanilla extract. Beat the mixture with a hand or stand mixer until it’s light and fluffy. This graham cracker dough will add a delightful crunch and that classic s’mores flavor to your cookies. Set the dough aside for now.
Variation: For a spiced twist, you can mix in a pinch of cinnamon or nutmeg into the graham cracker dough.
Prepare the Brownie Layer
Melt the unsalted butter in the microwave until it’s fully liquid. Add chocolate chips to the hot butter and let it sit for about 5 to 10 minutes. This allows the chocolate to soften, making it easier to mix. Stir the chocolate and butter together until completely smooth. Whisk in cocoa powder until the mixture is smooth and well combined. In a separate bowl, beat together an egg with both granulated and brown sugars until the mixture is smooth and lighter in color. Fold this into the chocolate and butter mixture, then add flour and salt. Combine everything with a rubber spatula until you have a thick, fudgy brownie batter. Cover and transfer the batter to the fridge for 10 to 15 minutes to chill and thicken slightly.
Tip: Chilling the brownie batter helps it hold its shape better when baking, so don’t skip this step!
Assemble and Bake the Cookies
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Use a large cookie scoop to portion out the chocolate cookie dough into 10 to 11 pieces. Flatten each piece into a thinner disc. Add about 1 to 2 tablespoons of the graham cracker cookie dough on top of each chocolate disc, pressing it down gently. Next, add 1 to 2 tablespoons of the chilled brownie base on top of the graham cracker dough and press it down slightly. Top each cookie with two halved marshmallows. For that classic s’mores look, sprinkle graham cracker crumbs on top and along the edges of the cookies. Bake until the edges are set, but the centers remain slightly soft—this should take about 10 to 12 minutes. Once baked, remove the cookies from the oven and let them rest on the tray for 10 minutes before enjoying. The centers will continue to set as they cool, and the marshmallows will be perfectly gooey.
Trick: If you love a toasted marshmallow flavor, pop the cookies under the broiler for a few seconds after baking, just until the marshmallows start to brown. You can also use a blow torch which I recommend doing over broiling in the oven. Either way, watch them closely to avoid burning.
Enjoy these s’mores brownie cookies warm and gooey, or let them cool completely for a perfect treat with a cup of milk. These cookies are sure to be a hit whether you’re enjoying them solo or sharing with friends!
