Pumpkin Pie Overnight Oats

Dessert meets breakfast for this delicious and cozy fall-inspired pumpkin pie overnight oats! Literally tastes like pumpkin pie but in the form of a very nutritious and hearty breakfast that takes literally less than 10 minutes of hands-on time to make.

Ingredients

  • 1 cup old fashioned oats
  • 1 cup milk of choice
  • 3 tablespoons maple syrup
  • 1/4 to 1/3 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice, more to taste
  • optional: chopped pecans

Instructions 

  1. In a bowl, combine the oats with milk, maple syrup, pumpkin puree, vanilla extract, and pumpkin spice. Mix together really well.
  2. Place in an air tight container or covered bowl and store in the fridge to soak and thicken overnight or at least 3 to 4 hours if you can't wait that long.
  3. The next morning, enjoy with a bit more pumpkin spice on top and optional chopped pecans and whipped cream.
