Peanut Butter Yogurt Cups

If you like peanut butter cups, you’re going to fall in love with the frozen yogurt version of the famous chocolate! Picture three layers: rich velvety chocolate, creamy sweet frozen yogurt, and nutty roasted peanut butter. They’re packed with protein and the perfect healthy sweet treat to meal prep and enjoy right out of the freezer!

Ingredients

  • 2 cups vanilla greek yoghurt
  • honey, to taste
  • 1 cup semi-sweet, milk, or dark chocolate, melted
  • 1 cup smooth peanut butter

Instructions 

  1. Add cupcake liners to a cupcake tin/tray.
  2. Add the chocolate to a bowl and pop in the microwave. Heat in 30 second intervals on 50% power, stirring in between until completely melted and smooth.
  3. Transfer about a tablespoon or two of melted chocolate to the bottom of each cupcake liner.
  4. Pop in the freezer for 1o to 15 minutes just until the chocolate is set.
  5. Take out of the freezer and add the yoghurt to fill each cupcake about 2/3 of the way full. If you want the yoghurt sweeter, mix it with a bit of honey to taste. Bang the tray a few times to flatten the yogurt or use a spoon to smooth it out.
  6. Pop in the freezer again for about 30 minutes.
  7. Take out of the freezer and add the peanut butter on top so each cupcake is now full.
  8. Pop back in the freezer for 45 minutes to an hour.
  9. Enjoy right out of the freezer after set!

Notes

  • Keep leftovers stored in the freezer in an air tight container.
  • Allow to thaw for 10 minutes before enjoying so the yogurt is creamy, not icy.
