Fluffernutter Muddy Buddies

I was absolutely obsessed with Muddy Buddies growing up, but this version takes it to the next level. They’ve got all the nostalgic flavors I loved as a kid, with a fluffernutter twist thanks to peanut butter and marshmallow fluff. Sweet, crunchy, and completely addictive—you’ll want to make a big batch because they disappear fast.

Ingredients

  • 6 1/2 cups rice chex cereal
  • 1 1/4 to 1 1/2 cups powdered sugar

COATING:

  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/3 cup marshmallow fluff
  • pinch of salt

OPTIONAL MIX-INS:

  • mini marshmallows
  • mini peanut butter cups
  • mini chocolate chips
  • peanut butter chips
  • reese’s Pieces

Instructions 

  1. Add the chex cereal to a large mixing bowl and set aside.
  2. In a medium pot over low heat, add the chocolate chips, peanut butter, butter, marshmallow fluff, vanilla extract, and salt. Stir continuously with a rubber spatula until smooth and fully melted, about 5–7 minutes.
  3. Pour the mixture over the Rice Chex and very gently fold with the rubber spatula until all the cereal is evenly coated.
  4. Allow the coated cereal to cool for about 4 to 5 minutes so it’s no longer piping hot, but not fully hardened.
  5. Transfer to a large zip-top bag or container, add the powdered sugar (adding as much or as little as you like), seal, and shake until the cereal is well coated.
  6. Optional: Spread onto a baking sheet to finish cooling and setting. This isn’t necessary, but it can help the mix stay extra crispy.
  7. Once cooled, mix in any of the optional add-ins like mini marshmallows, peanut butter cups, or Reese’s Pieces or just leave as is like the original!
  8. Store in an airtight container or ziploc back at room temperature for up to 1 week.

Notes

Q: Can I use a different cereal besides Rice Chex?
A: Yes! Corn Chex or even Crispix will work if that’s what you have on hand. For a slightly different texture, Crispix adds a little more crunch.
Q: Do I have to use marshmallow fluff?
A: The fluff gives this a fluffernutter twist, but if you want a more classic Muddy Buddies flavor, you can leave it out. Leaving it out makes it more like traditional Muddy Buddies—still delicious!
Q: How do I keep them from getting soggy?
A: Make sure to let the coated cereal cool for a few minutes before adding the powdered sugar, and spread them out on a baking sheet to set if you want them extra crispy. Using a baking sheet is optional, but it helps keep them crisp.
Q: How do I make them less sweet?
A: You can reduce the powdered sugar slightly, or use a little less peanut butter in the coating. Start by cutting the powdered sugar to the lower end of the range and taste as you go.
Q: Other flavor combos to try?
A: You can switch up the coating entirely! Try white chocolate with matcha, cookies and cream with crushed cookies, or dark chocolate with a sprinkle of sea salt. Peanut butter + milk chocolate is a classic, or even mix in caramel or butterscotch chips for a twist.
Q: Can I make these ahead of time?
A: Definitely! They stay fresh in an airtight container at room temperature for up to a week. Just give them a gentle shake before serving if they’ve been sitting a while.
