White Chocolate Caramel Cashew Clusters

Ooey gooey caramel cashew clusters are the easiest no-bake dessert that will have you feeling like a chocolatier master! The saltiness of the roasted cashews balances the sweetness of the chocolate and caramel so well - it’s truly unlike any other chocolate you buy from the store.

Ingredients

  • 8 ounces whole cashews, salted or unsalted
  • 11 ounces caramels
  • 3 tablespoons heavy cream
  • 1 cup white chocolate chips
  • 1/4 cup chopped cashews

Instructions 

  1. Line a baking sheet or large tray with parchment paper.
  2. Divide the nuts into clumps of about 12 to 15 cashews, about 1 inch apart on the baking sheet.
  3. Add the caramels to a microwave safe bowl along with the heavy cream. Pop in the microwave in 30 second intervals, stirring each time, until completely melted and smooth.
  4. Add about a small spoonful or tablespoon of the caramel on top of each nut cluster, making sure it covers all the cashews.
  5. Allow it to set until the caramel is firm to the touch, about 15 to 20 minutes. You can also transfer it to fridge to set faster.
  6. Now add a spoonful of white chocolate on top of the caramel and sprinkle the chopped cashews on top. Repeat with the rest.
  7. Transfer to the fridge for about 10 to 15 minutes until the chocolate firms up and then enjoys!

Notes

  • The caramels I like to use for this recipe is the Kraft bag of individually wrapped caramels. You can find them in the candy section or baking section of grocery stores.
