Taco Bell Copycat Mexican Pizza

Taco Bell Mexican Pizza at home and even better! This specialty item from Taco Bell was discontinued a while back and after so many fans were disappointed, they brought it back to the menu. But just in case it ever goes bye bye again, now you'll know how to make your favorite takeaway!

Ingredients

TACO MEAT

  • 1 pound ground beef 85/15
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons chili powder
  • 1 teaspoon coriander
  • 3/4 to 1 teaspoon salt, or to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 cup tomato sauce, more to taste
  • 1 tablespoon cilantro chopped

"PIZZA" SAUCE

  • 1/2 cup enchilada sauce
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 tablespoon jalapeño juice

OTHER

  • medium tortillas
  • shredded Mexican cheese
  • diced tomatoes
  • chopped cilantro
  • refried pinto beans
  • sour cream
  • diced green onions

Instructions 

TACO MEAT

  1. In a pan over medium heat, add olive oil and garlic and cook until golden.
  2. Then add ground beef to the pan along with all the taco spices (chili powder, coriander, salt, smoked paprika, cumin, oregano, black pepper, and onion powder) and start to mash with a spatula or wooden spoon to break up completely.
  3. Once the meat is browned and minced finely, add tomato sauce and cilantro. Mix and take off heat. Allow to cool slightly for a few minutes.

PIZZA SAUCE

  1. Combine the enchilada sauce, onion powder, garlic powder, chili powder, oregano, and jalapeño juice in a small bowl and set aside.

ASSEMBLE AND COOK

  1. To one tortilla, add a layer of refried beans, then the taco meat on top, and a sprinkle of shredded cheese.
  2. To another tortilla, add a layer of enchilada sauce, then shredded cheese on top, and diced tomatoes.
  3. Heat a pan over medium-low heat and spray with oil. Add both tortillas to the pan and toast until the bottom is golden and crispy.
  4. Take off the heat and stack on top of each other (tortilla with beans and beef goes on the bottom). Repeat this process until you have 3 to 4 pizzas.
  5. Add sour cream on top along with cilantro and green onions and cut into four pieces. Enjoy!

Notes

  • If you would like an easier method of cooking, toast the tortillas until crispy before adding all the filling and toppings. Once the tortillas are crispy and firm, add the fillings and toppings and layer them on top of each other. Then pop in the oven at 350°F for 8 to 10 minutes or until the cheese is melted on top.
  • Feel free to add a bit of cayenne powder to the taco meat if you'd like a bit of heat/kick.
