Shrimp Scampi

The easiest dinner in under 30 minutes is creamy, garlicky shrimp scampi! It’s absolutely delicious over a bed of pasta or with some crispy bread to dip in.

Ingredients

THE SHRIMP

  • 1 pound large shrimp, deveined and peeled
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

THE SCAMPI SAUCE

  • 1/4 cup unsalted butter
  • 1 1/2 tablespoon minced garlic
  • 1/4 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 2 tablespoons lemon juice, more to taste
  • 1/2 cup chicken broth
  • 1/4 to 1/3 cup parmesan, grated
  • 2 tablespoons parsley, finely chopped

Instructions 

  1. To a large bowl, add the shrimp. Optional, butterfly the back of each shrimp to make them large.
  2. Season the shrimp with paprika, onion powder, oregano, cumin, salt, and black pepper.
  3. Add olive oil to a pan over high heat. Once hot, add the shrimp in, making sure not to overcrowd them. Sear on one side for 2 minutes or until golden and then flip over to sear the other side. Remove from the pan once fully cooked.
  4. To the same pan, add more butter and minced garlic. Saute garlic for a minute and then add lemon juice to deglaze the pan. Scrape the bottom of the pan and add the chicken broth and red pepper flakes.
  5. Bring the broth to a boil and then lower the heat. Add the parmesan and parsley.
  6. Finally, add back in the shrimp. Combine all together, taste, and adjust anything to your linking.
  7. Enjoy warm with crispy bread or pasta!

Notes

  • You can use only smoked paprika or only sweet paprika depending on your taste or half-half.
