This is the kind of recipe that makes you fall in love with vegetables all over again. Everything bakes together over a rich, blended tomato base that turns soft, saucy, and deeply flavorful in the oven. It’s easy, comforting, and beautiful enough to feel a little special every time you make it.

Ingredients

TOMATO SAUCE BASE

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic, minced
  • 1/2 small yellow onion, diced
  • 1 small red bell pepper, diced
  • 4 to 5 sprigs fresh thyme, leaves removed
  • 14 ounces crushed tomatoes
  • 2 tablespoons heavy cream
  • 2 tablespoons parmesan, grated
  • 4 to 5 basil leaves
  • 3/4 teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon red vinegar

VEGETABLES

  • 1 to 2 zucchinis
  • 4 to 5 small Roma tomatoes
  • 1 to 2 yellow squash
  • 1 to 2 large Chinese eggplants

ASSEMBLY AND GARNISH

  • Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Chopped parsley

Instructions 

  1. Make the sauce: To a pan over medium heat, add the olive oil and unsalted butter. Once the butter is melted, add the diced yellow onion and red bell pepper and cook until softened. Add the garlic and thyme leaves and cook just until fragrant. Stir in the crushed tomatoes, heavy cream, grated parmesan, chopped basil, dried oregano, salt, pepper, and red vinegar. Let everything simmer for a few minutes to bring the flavors together.
  2. Blend the sauce: Use an immersion blender directly in the pan and blend until completely smooth. If using a regular blender, carefully transfer the sauce and blend until smooth.
  3. Prep the vegetables: Thinly slice the zucchini, Roma tomatoes, yellow squash, and Chinese eggplant into even rounds. You can use a mandolin slicer for quick, uniform slices or do this manually with a sharp knife.
  4. Assemble: Spread the blended tomato sauce evenly across the bottom of a 12 inch circular baking dish. Arrange the sliced vegetables upright in a tight, circular pattern, starting from the outer edge and working your way inward until the center is filled. Drizzle lightly with olive oil and season with salt and pepper.
  5. Bake: Cover with foil and bake at 375°F until the vegetables are tender, about 30 to 35 minutes. Uncover and bake another 15 to 20 minutes until lightly caramelized on top.
  6. Finish: Let rest for a few minutes before serving. Garnish with chopped parsley and an extra drizzle of olive oil if desired.

Q: Can I use a rectangular baking dish instead?
A: Yes. A 9 by 13 inch baking dish works just as well, though you’ll arrange the vegetables in rows instead of a circular pattern.
Q: Can I make this ahead of time?
A: Yes. Ratatouille tastes even better after it sits, so it’s perfect made a day ahead and gently reheated.
Q: Do I need to peel the Chinese eggplant?
A: No. The skin is thin and becomes very tender as it bakes.
