Preheat oven to 400°F.
In a small bowl, add the melted butter along with the chili powder, salt, garlic powder, oregano, black pepper, and cilantro. Mix and set aside.
Place potatoes in the microwave and heat in 30 second intervals to soften them just a bit for 1 to 2 minutes.
Insert a wooden stick through the center of each potato.
On a cutting board, slice the potato with a sharp knife at a diagonal starting from the top making your way to the bottom while rotating the potato in the opposite direction with your other hand. You will be cutting all the way down to the skewer as you rotate at an angle. See video below for a visual.
Then spread the potato out gently, creating gaps between each slice, to turn it into a spiral.
Place on a parchment-lined baking tray. Brush with the butter.
Pop into the oven to bake. Rotate every 15-20 minutes. Optional, brush with more butter when you rotate.
Take out of the oven. If you'd like an elote-inspired taste, add a drizzle of mayo on top along with cotija, cilantro, cayenne, and lime juice.
