Poke Bowl

Homemade poke bowls with spicy tuna and ponzu-flavored salmon! BRIGHT, bold, and REFRESHING.

Ingredients

  • 1 pound salmon sashimi, chilled and cubed
  • juice of 1/2 lime
  • 1 tablespoon orange juice
  • 2 tablespoons soy sauce
  • 1 green onion, sliced
  • 3/4 pound tuna sashimi, chilled and cubed very small
  • 2 to 3 tablespoons sriracha
  • 1 tablespoon sesame oil
  • 1/4 teaspoon salt
  • 2/3 cup mayonnaise
  • 4 tablespoons sriracha
  • 4 cups cooked jasmine rice
  • 1 tablespoon rice vinegar
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • sesame seeds, optional

Instructions 

  1. PREPARE PONZU SALMON: Mix salmon with lime juice, orange juice, soy sauce, and sliced green onion in a bowl.
  2. PREPARE SPICY TUNA: Mix tuna, sriracha, sesame oil, and salt in a bowl.
  3. PREPARE RICE: You can use any rice you'd like. Once it is cooked and while it is still hot, add the rice vinegar, sugar, and salt. Mix together well.
  4. MAKE SPICY MAYO: In a small bowl, mix together mayonnaise and sriracha. Taste it and if you like it more spicy, add more sriracha.
  5. ASSEMBLE: Add your base which can be rice or even a salad blend. Add the seafood on top along with any toppings you like. Drizzle a generous amount of spicy mayo on top. Sprinkle sesame seeds on top and enjoy!
