Pizza Grilled Cheese

The best way to enjoy a grilled cheese is to make the pizza version! It's a combination of everyone's two favorite cheesy foods and it couldn't get more delicious than this. Picture garlic and herb toasted bread with turkey pepperoni, marinara, and lots of cheese and basil stuffed in between. Super easy to make and always a hit regardless of age too!

Ingredients

GARLIC AND HERB SPREAD

  • 1/4 cup mayonnaise
  • 1 tablespoon parsley finely chopped
  • 2 teaspoons garlic finely minced
  • 1 tablespoon parmesan grated
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

BREAD AND FILLING

  • 8 slices thick sliced bread
  • 3 cups shredded mozzarella
  • 1/4 cup grated parmesan
  • turkey pepperoni
  • 1/4 cup chopped basil
  • 1/2 cup marinara sauce

Instructions 

MAKE THE GARLIC AND HERB SPREAD

  1. To a small bowl, add the mayo, parsley, garlic, parmesan, black pepper, and oregano. Mix together and set aside.

ASSEMBLE THE GRILLED CHEESE

  1. Start out by spreading about half a tablespoon of the garlic and herb spread on one side of each toast.
  2. Flip over and start assembling on one side. Add a little bit of shredded mozzarella. Then add dollops of marinara on top along with the pepperoni, basil, and parmesan. Finish off with a bit more mozzarella and seal it shut with another piece of toast - spread side up.

COOK

  1. Heat a pan over medium low heat and add the assembled sandwich on. Cook for about 3 minutes on each side. Flip over once golden and repeat with other side. The cheese should be fully melted and the bread should be golden brown on both sides.
  2. Enjoy warm with more marinara to dip in!

Notes

  • Instead of adding the marinara inside, you can also leave it out and just use it as a dip.
  • Feel free to use sliced mozzarella cheese instead of shredded!
  • Instead of mayo, you can use softened salted butter for the bread if you prefer.
  • For the pepperoni, you can choose to cook it a bit on the pan before adding it to the grilled cheese or just leaving it as is. Either way works fine.
