Paratha Breakfast Sushi

Have you ever craved sushi for breakfast? This paratha egg roll may not be anything like sushi with fish, rice, and seaweed but it definitely reminds me of it. It's so fun to eat just like sushi in little chopped rolls packed with so much flavor!

Ingredients

  • 2 paratha wraps, cooked
  • 3 to 4 large eggs
  • salt, to taste
  • black pepper, to taste
  • avocado or olive oil, for cooking eggs
  • cheddar cheese slices, or any cheese of choice
  • cooked beef or turkey bacon
  • mayonnaise

Instructions 

  1. To a bowl or mixing cup, crack the eggs in and add salt and black pepper. Whisk together well to combine.
  2. Heat a frying pan over medium heat and add a little bit of oil. Make sure the frying pan is the same size as the paratha.
  3. Add half of the egg mixture in and let it cook just until the bottom of the egg is cooked but the top part is still raw.
  4. Take the cooked paratha and place it gently on top so it sticks to the raw egg. Continue to let it cook until the eggs are fully cooked. Slide off the pan and flip so the egg part is exposed.
  5. Add any filling you like such as cheese, beef bacon, and mayo. Roll up tightly and chop into small rolls to enjoy!

Notes

The version I had in the Middle East used Kiri cheese which was so good and definitely recommend. You can find this at most arab grocery stores but the best substitute for it is cream cheese.
To make this vegetarian, leave out the protein. You can also use deli meat if you'd like.
