If you like s’mores, you’re going to love these no-bake truffles then! Picture gooey marshmallow, a crispy honey graham cracker crust, all dipped in creamy chocolate. It’s basically a more sophisticated version of a s’mores and I think it tastes better too.
Cut off a portion of the marshmallow so that it is sticky on one side.
Attach to a graham cracker and cut the graham cracker with a sharp knife to the size of the marshmallow. Repeat with the rest of the marshmallows and graham crackers. If you are having trouble with the marshmallow sticking, you can add a bit of melted chocolate in between and let it harden to act as glue. Another option is using marshmallow fluff as glue.
Stick a toothpick into each piece directly into the marshmallow.
Add chocolate to a microwave-safe bowl and microwave in 30 second intervals on 50% power. Stir between each interval until completely melted and smooth.
Dip each piece into the chocolate and let any excess drip off. Lay flat on parchment paper on a baking tray. Repeat with the rest. Optional, you can add a sprinkle of crushed graham crackers or mini marshmallows on top.
Pop in the fridge for 15 to 20 minutes until the chocolate is set.
At this step, you can add a drizzle of chocolate on top or enjoy as is!
Notes
If this makes it easier for you, you can chill the marshmallows attached to the graham crackers in the fridge before dipping in chocolate too! This will just help the chocolate harden faster but it's not necessary.
