No Bake Oreo Cheesecake – High Protein

Cottage cheese blends down completely smooth to become the creamy base of this no-bake cheesecake pudding. It's layered with whole Oreo cookies, folded with even more chopped Oreos throughout the filling, and finished with a glossy chocolate ganache poured over the top. It comes together in ten minutes and the fridge does the rest.

Ingredients

FILLING

  • 1 pound whole milk cottage cheese
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup vanilla protein powder
  • 1/2 cup whipped cream topping
  • 10 Oreo cookies, roughly chopped

GANACHE

  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

ASSEMBLY

  • 1 sleeve Oreo cookies, whole
  • 3 Oreo cookies, crushed, for topping

Instructions 

MAKE THE FILLING

  1. In a large bowl, add the cottage cheese and use an immersion blender to blend until completely smooth and creamy and no chunks remain.
  2. Add the protein powder, vanilla extract, and maple syrup, then combine until smooth.
  3. Fold in the whipped cream topping until fully incorporated, then fold in the chopped Oreo cookies.
  4. Cover and set aside in the fridge for the following steps.

MAKE THE GANACHE

  1. In a small saucepan or microwave-safe bowl, heat the heavy cream until warm.
  2. Pour the warm cream over the chocolate chips, cover and let sit for 10 minutes. Then uncover and whisk until smooth and glossy.

ASSEMBLE

  1. In individual cups, small containers, or one big dish, layer the whole Oreo cookies on the bottom, then a generous layer of the cheesecake filling.
  2. Pour the ganache over the top and sprinkle with the crushed Oreo cookies.
  3. Cover and let set in the fridge for at least 2 hours, then enjoy!

Notes

Q: Can I use a different protein powder?
A: Yes! Any vanilla protein powder works here. Just keep in mind that some powders are thicker or sweeter than others, so you may need to adjust slightly based on the brand you use.
Q: What if I don't want to add protein powder?
A: No problem! Simply leave it out and add white sugar to taste to sweeten it up instead.
Q: Do I have to use an immersion blender?
A: A regular blender or food processor works too. You just want the cottage cheese completely smooth before anything else goes in.
Q: How long does it keep in the fridge?
A: Up to 3 to 5 days covered in the fridge. The Oreos will continue to soften the longer it sits, which honestly makes it even better.
Q: What if I want it sweeter?
A: Add a tablespoon of white sugar at a time to the filling until it's as sweet as you'd like.
