It’s packed with bright citrusy lemon flavor and the cake is incredibly moist and soft just like the real thing but even better. Drizzled with the most delicious glaze on top, this cake is surprisingly so easy to make and perfect for the summer coming up!

Ingredients

LEMON CAKE

  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3.2 ounces package lemon instant pudding
  • 1 1/4 cup white granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest

LEMON ICING

  • 2 cups confectioners sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F.
  2. To a large mixing bowl, add the all-purpose flour, baking powder, baking soda, salt, and lemon instant pudding. Whisk together well.
  3. To another bowl, add the sugar, eggs, vegetable oil, sour cream, vanilla extract, lemon juice, and lemon zest. Beat together until smooth.
  4. Now add all the dry ingredients to the wet. Combine together until you have a batter.
  5. Line a loaf pan with parchment paper and transfer the batter.
  6. Bake for 55 minutes to 1 hour until a toothpick comes out clean in the center.
  7. Remove from the oven and allow to cool for about an hour before glazing.
  8. To a bowl, combine confectioners sugar with lemon juice and milk to create a glaze.
  9. Once the cake is cooled, add the glaze on top, adding as little or as much as you'd like.
