Japanese Fried Egg Salad Sandwiches

These fried egg salad sandwiches are a popular food in Tokyo, and now you can make them at home. The shokupan gets fried until golden and crispy, then stuffed with a soft, creamy egg salad that's just tangy enough. Simple ingredients, but the fried bread makes all the textural difference.

Ingredients

EGG SALAD

  • 8 large eggs
  • 1/4 cup Kewpie mayonnaise
  • 1/2 teaspoon salt, add to taste
  • 1/2 teaspoon black pepper
  • 1/2 to 1 teaspoon white granulated sugar, add to taste
  • 1 teaspoon yellow mustard
  • 2 tablespoons heavy cream or milk

BREAD

  • 5 thick slices shokupan, Japanese milk bread
  • vegetable oil, for frying

OTHER

  • green onions, thinly sliced, for topping

Instructions 

BOIL THE EGGS

  1. In a medium pot, bring water to a boil over high heat.
  2. Using a spoon, gently lower each egg into the boiling water. Reduce the heat to medium and set a timer for 8 minutes.
  3. Once the timer goes off, immediately transfer the eggs to a bowl of ice water and let sit for 5 minutes to stop the cooking.
  4. Once cooled, tap each egg gently on the counter to crack the shell all over, then roll it gently with your hand on a hard surface to loosen the shell. Peel starting from the wider end, until the shell comes away cleanly.

MAKE THE EGG SALAD

  1. On a cutting board, slice each peeled egg in half long ways. Scoop the yolks into a large bowl and set the whites aside on the cutting board.
  2. Chop the egg whites into small chunks.
  3. To the bowl of yolks, add the Kewpie mayonnaise, salt, black pepper, sugar, mustard, and heavy cream or milk. Mash and stir with a fork until smooth and creamy.
  4. Add the chopped egg whites to the yolk mixture and fold together with a spoon until the whites are fully coated in that creamy sauce. Cover and refrigerate until ready to assemble.

FRY THE BREAD

  1. In a large skillet, heat one to two inches of vegetable oil over medium heat until it reaches 350°F.
  2. Fry each slice of shokupan for one to two minutes per side, until deep golden brown and crispy.
  3. Transfer the fried bread to a wire rack set over a tray to drain.
  4. Once cool enough to handle, cut each slice in half and use a paring knife to open a pocket inside each piece.

ASSEMBLE THE SANDWICHES

  1. Spoon the egg salad generously into each fried bread pocket.
  2. Top with a sprinkle of sliced green onions before serving and enjoying.

Notes

Q: Can I use regular mayonnaise instead of Kewpie?
A: You can, but Kewpie has a richer, slightly tangier flavor from the rice vinegar that gives this egg salad its signature taste, so I'd recommend seeking it out if you can.
Q: Why boil the eggs for only 8 minutes?
A: Eight minutes gets you a yolk that's fully set but still soft and creamy, not chalky or dry, which makes for a much better egg salad texture.
Q: Can I make the egg salad ahead of time?
A: Yes, it keeps well covered in the fridge and can be made a day in advance, just give it a stir before assembling.
