French Tacos

French tacos are nothing like traditional tacos — they’re more like a wrap-meets-burrito-meets-panini, loaded with spiced meat, fries, gooey cheese sauce, and pressed until crispy. You’ll find them all over France, and I got obsessed on my last trip — I had them three times in one week. I’ve been craving them ever since, so I had to recreate them at home!

Ingredients

CHICKEN MARINADE:

  • 1.5 pounds boneless, skinless chicken thighs, chopped into pieces
  • 2 tablespoons plain yogurt
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon harissa
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 2 teaspoons minced garlic
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon lemon juice

CHEESE SAUCE:

  • 1 1/4 cups half and half, warm, more as needed
  • 1/2 cup grated white cheddar cheese
  • 1/2 cup grated gruyere cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons crème fraîche
  • 1/4 to 1/2 teaspoon salt, to taste
  • 1/4 teaspoon black pepper, more to taste
  • 1/4 teaspoon mustard powder
  • dash of cayenne pepper
  • pinch of nutmeg

ALGERIAN SAUCE

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon tomato paste
  • 1 tablespoon harissa, or to taste
  • 1 tablespoon finely chopped cilantro
  • 1/4 small red onion, finely chopped
  • squeeze of lemon juice

TO SERVE:

  • 4 large burrito-size flour tortillas or flatbreads
  • neutral oil, for toasting
  • 16 ounces cooked french fries

Instructions 

  1. Make the Algerian Sauce: In a bowl, combine mayonnaise, ketchup, tomato paste, harissa, cilantro, red onion, and lemon juice. Stir until creamy and smooth. Chill until ready to use.
  2. Make the Cheese Sauce: In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes. Slowly pour in the half and half, whisking constantly. Once it thickens, add the cheddar and gruyere and stir until melted. Mix in crème fraîche, mustard powder, cayenne, nutmeg, salt, and black pepper. Keep warm.
  3. Marinate the Chicken: In a bowl, combine yogurt, tomato paste, olive oil, harissa, salt, coriander, oregano, smoked paprika, garlic, black pepper, and lemon juice. Add the chopped chicken and mix well. You can cook it right away or marinate for at least 1 hour or even overnight.
  4. Cook the Chicken: Heat a sauté pan over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until fully cooked and slightly charred, about 6–8 minutes.
  5. Assemble the Wraps: Lay a tortilla flat. Spoon a layer of cheese sauce down the center, then pile on the cooked chicken. Add a handful of hot, crispy fries right on top. Drizzle with Algerian sauce. Tuck in the sides, fold the bottom up, and roll into a rectangular-ish shape, seam-side down.
  6. Lightly spray the press with oil. Place the wrap diagonally, press until golden, then rotate 90° to create that criss-cross grill pattern. Slice in half and enjoy right away, with extra cheese sauce or Algerian sauce on the side.
