  • 1 tablespoon sour cream or Mexican crema
  • 1 tablespoon lime juice
  • 2 teaspoon chili powder

Instructions

  1. Start out by adding butter to the corn on the cobs.
  2. Heat a BBQ or grill pan over medium-high heat and add the corn. Twist and turn every few minute to char each side evenly. Once grilled, take off the heat. Chop off the corn from the cob.
  3. To a bowl, combine the grilled corn with mayonnaise, sour cream, cotija, lime juice, cilantro, chili powder, and red pepper flakes or cayenne powder. Mix together. Taste and adjust anything to your liking.
  4. On the grill pan or BBQ, add the hot dogs and cook until beautifully charred as well, rotating every few minutes. Take off the heat when grilled to liking.
  5. Toast hot dogs buns and assemble with the meat, elote, and any other toppings you like. Enjoy warm!
