Ingredients

  • 2 demi baguettes
  • 6 eggs
  • beef bacon
  • mozzarella cheese, shredded
  • basil, chopped
  • parsley, chopped
  • grated parmesan
  • red pepper flakes
  • salt, to taste
  • black pepper, to taste

GARLIC BUTTER

  • 1/2 cup unsalted butter, melted
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon garlic, finely minced
  • 3 tablespoons parmesan, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat oven to 400°F.
  2. To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
  3. Take each baguette and cut three sections out of each one so it creates three wells.
  4. Brush the garlic butter all along the inside and outside.
  5. Add beef bacon to the bottom of each well and then mozzarella cheese. Crack an egg on top into each well.
  6. Bake in the oven for 12 to 15 minutes, larger eggs will take longer to cook.
  7. Take out of the oven once the egg whites are set and finish it off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes to enjoy!

Notes

  • DO NOT cook the bacon on the pan previously. It will burn in the oven. You can just add it raw into the bread and it will cook in the oven along with the egg.
  • If you use large eggs versus smaller ones, it will take a few more minutes for the white to fully cook.
  • Depending on if you like a runny yolk, jammy yolk, or hard, cook shorter or a longer time respectively.
