Dippy eggs and soldiers are a classic British breakfast that may seem like just eggs and toast, but the experience is completely different. Soft, creamy yolks meet thin, buttery toast strips for dipping, creating a breakfast that’s comforting and satisfying. This recipe shows you exactly how to get the eggs and toast just right every time.

Ingredients

  • 4 large eggs, 2 per person
  • 4 slices of bread of choice, 2 per person
  • butter, for spreading and toasting bread
  • salt and pepper, to taste

Instructions 

  1. Bring a small pot of water to a gentle boil.
  2. Carefully lower the eggs into the water with a spoon. Boil for 5–6 minutes for soft, runny yolks.
  3. Once cooked, transfer the eggs immediately into a bowl of ice water to stop them from overcooking. Leave for 1 minute.
  4. While the eggs cool slightly, spread butter over each slice of bread and toast until golden and crisp.
  5. Cut the buttery toast into thin strips, just narrow enough to dip into the egg yolk.
  6. Remove the eggs from the ice water, dry gently, and place in egg cups.
  7. Use an egg cracker tool to remove the top of each egg.
  8. Sprinkle salt and pepper into the egg yolk.
  9. Dip the thin toast soldiers into the yolk, then scoop out the whites with a spoon and enjoy.

A: Sandwich white bread is classic, but sourdough or whole wheat are also great options for soldiers.

A: No — you can gently tap around the top with a spoon and peel off the shell. The tool just makes it easier and neater.
