Drawing inspiration from her recipe, these tacos are stuffed with seasoned ground beef cooked to perfection, wrapped in a crispy tortilla, and oozing with melty Monterey Jack cheese. It’s the easiest dinner that everyone always loves, even the pickiest of eaters!

Ingredients

GROUND BEEF

  • 1 pound ground beef, 90/10 or 85/15
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons chili powder
  • 1 teaspoon coriander
  • 3/4 teaspoon salt or to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 cup tomato sauce
  • 1 tablespoon cilantro, finely chopped

FOR ASSEMBLY

  • small flour or corn tortillas, for tacos
  • oil, for frying tacos
  • shredded Monterey Jack cheese
  • avocado
  • shredded lettuce
  • sour cream
  • tomatoes
  • pickled jalapeños

Instructions 

MAKE THE GROUND BEEF

  1. In a pan over medium heat, add olive oil and garlic and cook until golden.
  2. Then add ground beef to the pan along with all the taco spices (chili powder, coriander, salt, smoked paprika, cumin, oregano, black pepper, and onion powder) and start to mash with a spatula or wooden spoon to break up completely.
  3. Once the meat is browned and minced finely, add tomato sauce and cilantro. Mix and take off the heat.

MAKE THE TACOS

    Heat a pan over medium heat. Add a drizzle of avocado oil to the pan once hot. Add tortillas to the pan, as many as can fit. To one half, add the ground beef and shredded cheese. Fold over the other half to close it and allow it to toast until golden brown. Then flip over and repeat on the other side. Take off the heat, open up, and stuff with your favorite veggies and taco toppings like sour cream, lettuce, guac, tomatoes, and jalapeños to enjoy!
