Chocolate Date Caramel Peanut Butter Cups

Treat yourself to a fun twist on the classic Reeses peanut butter cup but made with a homemade date caramel. It’s creamy from the dates, crunchy from the peanuts, and so rich from the chocolate. These little sweet treats have the perfect balance of sweet and salty and are way more healthy than your typical chocolate peanut butter cups - not to mention tastier!

Ingredients

  • 1 cup date caramel
  • 1/2 cup chopped peanuts
  • 2 cups chocolate, melted (milk, semi-sweet, or dark)
  • 1 tablespoon coconut oil
  • sea salt, optional topping
  • chopped peanuts, optional topping

Instructions 

  1. Line a muffin/cupcake tray with paper liners or silicone muffin cups.
  2. Place the chocolate and coconut oil in a heatproof bowl.
  3. Microwave the chocolate in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate over a double boiler.
  4. Spoon about 1 tablespoon of melted chocolate into each muffin cup, using the back of the spoon to spread the chocolate evenly along the bottom and up the sides of each cup, creating a shell. Make sure to leave some melted chocolate aside for sealing the cups later.
  5. Place the muffin tray in the refrigerator to allow the chocolate shells to set for about 10-15 minutes.
  6. Transfer the date caramel filling to a bowl and stir in the chopped peanuts.
  7. Once the chocolate shells have set, remove the muffin tray from the refrigerator.
  8. Spoon a small amount of the date caramel and peanut mixture into each chocolate cup, filling them about three-quarters full.
  9. Using the remaining melted chocolate, spoon a little over the top of each cup, spreading it to seal the filling completely and create a smooth top.
  10. Optional, add a sprinkle of sea salt and chopped peanuts on top as a garnish.
  11. Return the muffin tray to the refrigerator and chill the chocolate cups for at least 30 minutes, or until the chocolate is completely set.
  12. Once set, carefully remove the chocolate cups from the muffin tray.
  13. Serve the chocolate cups chilled or at room temperature. Enjoy.
