Cheesy Chipotle Breakfast Sandwiches

Breakfast sliders are the perfect breakfast recipe to whip up for the whole family or for a brunch party! They’re so easy to make and always hit the spot when you need an effortless meal that will get devoured in seconds.

Ingredients

FOR THE SANDWICHES

  • 4 brioche buns, or sub for English muffins, sourdough, toast, etc, toasted
  • 6 slices beef bacon
  • 1 to 2 teaspoons brown sugar
  • 5 to 6 large eggs
  • 1 tablespoon unsalted butter
  • salt, to taste
  • black pepper, to taste
  • 4 slices American cheese
  • 1 to 2 avocados, sliced

CHIPOTLE SAUCE

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • juice of 1 lime
  • 1/2 tablespoon honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 to 3 tablespoons adobo paste
  • chipotle peppers to taste pureed into a paste, to add spiciness

Instructions 

MAKE THE CHIPOTLE SAUCE

  1. To make the chipotle sauce, mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl. Once smooth, set it aside.

COOK THE EGGS, BACON, AND, BUNS

  1. To a pan over medium heat, add butter or oil. Crack the eggs in and allow it to cook low and slow.
  2. Break apart the yolks and slowly move the eggs around to make them scrambled and super fluffy. Optional, I love adding a bit of cheddar cheese to melt into the scrambled eggs!
  3. Add salt and black pepper to taste and once the eggs are fully cooked to the way you like them, take off the pan.
  4. Now it's time to cook the bacon. Add bacon to a hot pan over medium heat. Allow it to fry on one side until golden and crispy, then flip it over. Add a sprinkle of brown sugar if you'd like at this step and continue to cook. Once crispy and fully cooked, take off the pan.
  5. Toast the buns with a bit of butter or mayo on a pan or in a toaster.

ASSEMBLE

  1. To each bun, add chipotle sauce, eggs, cheese, and avocado. Enjoy warm!

Notes

  • You can also turn these into sliders using Hawaiian rolls!
