Preheat oven to 425°F.
Cut the butternut squash in half and remove all the seeds.
Drizzle a tablespoon of olive oil on the inside of the halves and spread evenly.
Lay face down on a baking sheet and roast for 45 to 50 minutes until it is tender, soft, and caramelized.
Allow the butternut squash to cool down for 10 minutes and then take out the filling and discard the skin.
Heat a pot over medium heat. Add the butter and olive oil.
Add the garlic and onion and sauté for 2 to 3 minutes until the onions are translucent.
To the pot, add the roasted butternut squash, chicken broth, heavy cream, sage, rosemary, and thyme. Mix together.
Use an immersion blender to blend everything until completely smooth and no more chunks remain.
Season with salt, black pepper, red pepper flakes, nutmeg, smoked paprika, grated parmesan, and brown sugar. Mix together. Taste and adjust anything to your liking.
Cover the pot and let it simmer on low heat for 30 minutes to help the flavors come together.
After 30 minutes take off the heat and serve warm!
