Breakfast Chicken Sausage Patties

Juicy, herby chicken sausage patties made from scratch with simple pantry spices. Fresh sage, thyme, garlic, and a touch of brown sugar make these so much better than anything from the store. Perfect for meal prepping and throwing together quick and easy breakfast sandwiches all week.

Ingredients

  • 1 pound ground chicken
  • 2 tablespoons water
  • 1 tablespoon fresh sage, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon brown sugar or maple syrup
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon nutmeg
  • Neutral oil or butter, for cooking

Instructions 

MAKE THE SAUSAGE MIXTURE

  1. In a large bowl, combine the ground chicken with all the spices, brown sugar, and water.
  2. Mix until everything is evenly incorporated. Do not overmix.
  3. Divide the mixture into 8 to 10 equal portions and form each one into a patty.

COOK THE PATTIES

  1. Heat a skillet over medium-high heat and add a drizzle of neutral oil or a small pat of butter.
  2. Add the patties in batches, making sure not to crowd the pan.
  3. Cook for 4 to 5 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F.
  4. Remove from heat and serve immediately.

Notes

Q: Can I make these ahead of time?
A: Yes! Form the patties and store them in the fridge for up to 2 days before cooking. You can also freeze them uncooked. Layer them between sheets of parchment paper and freeze for up to 3 months. Cook straight from frozen over medium-low heat, adding a few extra minutes per side.
Q: How do I know when they're cooked through?
A: The best way is with a meat thermometer. You're looking for an internal temperature of 165°F. They should also be golden brown on both sides with no pink in the center.
Q: Can I use ground turkey instead?
A: Yes, ground turkey works great as a swap and cooks the same way.
Q: Can I adjust the spice level?
A: Absolutely. Add more crushed red pepper for extra heat or leave it out entirely for a milder patty. I will say these are not spicy though with what the recipe calls for.
