Preheat the oven to 350°F.
In a small bowl, whisk together all purpose flour, baking soda, and salt.
In a large bowl, whisk together the butter, Biscoff spread, brown sugar, white sugar, eggs, and vanilla extract.
Combine the wet with the dry using a rubber spatula until a dough forms.
Add the white chocolate chips and crushed biscoff cookies. Mix together.
Scoop out large portions of dough onto a parchment-lined baking sheet, making sure they're spaced apart.
Bake for about 10 minutes.
Right when it comes out of the oven, insert half a biscoff cookie in the center of each cookie. This is optional and mostly for decor!
Allow it to cool on the tray for 10 minutes before transferring to a rack to finish cooling down and then enjoy!
