Cottage cheese has truly had a glow up and this Biscoff Banana Pudding Cheesecake is exactly why. When you blend it down it becomes silky smooth and creates the perfect base for a high protein dessert that actually tastes like a treat. You would never guess there is cottage cheese in here but that is exactly what makes it so good.

Ingredients

  • 1 pound whole milk cottage cheese
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup vanilla protein powder
  • 1/4 cup cookie butter, plus more for drizzling
  • 1/2 cup whipped cream topping
  • 4 bananas, thinly sliced
  • 1 sleeve Biscoff cookies

Instructions 

  1. To a large bowl, add the cottage cheese and use an immersion blender to blend until completely smooth and creamy and no chunks remain.
  2. Add the protein powder, cookie butter, vanilla extract, and maple syrup and combine until smooth. Fold in the whipped topping until fully incorporated.
  3. In individual cups, small containers, or one big dish, layer Biscoff cookies, sliced bananas, and then the cheesecake pudding mixture.
  4. Drizzle cookie butter on top if you would like. Then cover and let set in the fridge for at least 2 hours before enjoying.

Q: Can I use a different protein powder?
A: Yes! Any vanilla protein powder works here. Just keep in mind that some powders are thicker or sweeter than others, so you may need to adjust slightly based on the brand you use.
