Banana Bread Oatmeal Bake

Did you know you can meal prep oatmeal but make it even better? This chocolate chip banana bread-inspired oatmeal bake has so much texture and flavor. It makes for a delicious breakfast all week!

Ingredients

  • 2 cups old-fashioned oats
  • 1 1/2 cup almond milk
  • 2 mashed bananas
  • 2 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 1/4 cup walnuts, chopped
  • 1/4 cup chocolate chips

Instructions 

  1. Preheat the oven to 350°F.
  2. To a large bowl, add the oats, almond milk, mashed bananas, maple syrup, brown sugar, coconut oil, baking powder, cinnamon, vanilla extract, and sea salt. Mix together to combine with a rubber spatula.
  3. Line a 9x9 pan with parchment paper. Pour the oat mixture over. Add walnuts and chocolate chips on top.
  4. Pop in the oven to bake for 35 to 40 minutes until fully set in the center and crispy on the edges. Do not overbake.
  5. Take out of the oven, cool for 10 minutes, then cut into individual slices to enjoy warm!

Notes

Feel free to add more maple syrup or brown sugar if you like it sweeter but remember the bananas also act as a natural sweetener.
