Baklawa Croissants

Baklawa meet croissant! Croissant meet Baklawa! This might quite possibly be the best dessert fusion you'll ever have. Imagine a crispy flakey croissant filled with spiced pistachio filling and orange blossom syrup, and then finished off with crushed pistachios and rose petals!

Ingredients

CROISSANTS

  • 6 to 8 croissants, 1 to 3 days old
  • 1/2 cup chopped pistachios
  • powdered sugar

SIMPLE SYRUP

  • 1/2 cup water
  • 1/3 cup sugar
  • 1 teaspoon orange blossom water

PISTACHIO FILLING

  • 1 1/2 cups pistachio flour, see note below
  • 3/4 cup granulated white sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 to 1 teaspoon cinnamon
  • 2 large eggs
  • 2 tablespoons heavy cream

Instructions 

MAKE THE SIMPLE SYRUP

  1. To a pot over medium heat, add the water, sugar, and orange blossom water. Bring to a boil so all the sugar is dissolved and then reduce the heat to low and simmer for 10 minutes. Transfer to a bowl and allow to cool to room temperature so it thickens up.

PREPARE THE PISTACHIO FILLING

  1. To a bowl, add the pistachio flour, sugar, cornstarch, salt, unsalted butter, vanilla extract, eggs, and heavy cream.
  2. Beat together until light and fluffy using a stand or hand mixer.

ASSEMBLE AND BAKE

  1. Preheat oven to 350°F.
  2. Slice the croissants in half to open them up like a book.
  3. Soak both sides in the simple syrup. Be generous with it. You can brush the syrup on or just dunk it for a more efficient method.
  4. Add the pistachio filling across the whole inside. Close the croissant. Add a line of pistachio filling across the top and sprinkle on chopped pistachios. Repeat with the rest of the croissants.
  5. Bake in the oven for 12 to 15 minutes until crispy all around.
  6. Allow to cool for 15 minutes, then dust with powdered sugar, and enjoy!

Notes

  • For the pistachio flour, you cannot buy this from the store. To make it, you just need raw or roasted pistachios, depending on your taste. Add them to a food processor and blend until it resembles sand. Make sure not to blend it too much or else it will start to turn into a paste.
