Bagel Breakfast Boats

These bagel breakfast boats are my go-to when I want something cozy but a little more fun than the usual eggs and toast. The bagels get lightly crisp on the outside while soaking up that cheesy egg filling inside, almost like a built-in breakfast sandwich situation. You can switch up the fillings however you want, so it never gets old.

Ingredients

BAGELS

  • 3 plain bagels

FILLING

  • 5 large eggs
  • 3 tablespoons whole milk
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 ounces beef bacon, chopped
  • 1/4 cup cheddar cheese, shredded

Instructions 

PREP THE BAGELS

  1. Preheat your oven to 350°F.
  2. Using a knife, make two cuts in each bagel: one cut all the way around the outer edge and another cut all the way around the inner circle, creating a ring.
  3. Remove that center ring piece of bread, then press the bottom and sides down firmly to create a deep well for the filling.

MAKE THE FILLING

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
  2. Stir in the chopped beef bacon and shredded cheddar cheese.

FILL AND BAKE

  1. Place the bagels on a lined baking sheet.
  2. Carefully pour the egg mixture into each bagel, filling to the top. Some of the mixture may get absorbed into the bagel, so you might need to go back and add a little more as you fill the others.
  3. Transfer to the oven and bake for 15 to 20 minutes, or until the eggs are set in the center.
  4. Let cool slightly, then enjoy warm.

A: The centers should be fully set and the top should feel firm, not jiggly, when you gently press it.

A: Yes, bake them fully, let them cool, then store in the fridge. Reheat in the oven or air fryer until warmed through.

A: You can use turkey bacon, turkey sausage, or chicken sausage, or skip it and add sautéed veggies instead.
